I tried doing the South Beach Diet last week and by Friday night I bailed. I had a fun, splurgey weekend and thought I’d try again this morning. No such luck. I love my fruits, whole grains, cereal, and snacks way too much. I did, however, make a great dinner menu for the week and still plan on following it. I know that I was always looking for ideas and menus so I thought I’d post this in case anyone was searching.
Sunday: (turkey)sausage with onions and peppers, mashed cauliflower, salad
Monday: steak, mashed cauliflower with cilantro and cheddar cheese, caesar salad
Tuesday: shrimp, black beans, avocado and tomato salad
Wednesday: turkey chili, salad
Thursday: tilapia, caesar salad, broccoli
Friday: steak, zucchini and yellow squash saute, tomato and mozzarella salad
Saturday: salmon, edamame salad, mashed cauliflower
Oh and a fabulous Phase 1 dessert idea:
Take one “no sugar added” fudgsicle and scrape it all off the stick into a bowl. Add some peanut butter. Mix together and eat like ice cream. It is ridiculously delicious. Tastes like a Reese’s Peanut Butter Cup!!

This week my goal is to double up on at least three of my meals and freeze half of each one, in preparation for my new baby. I don’t want to have to worry about feeding the rest of my family those first couple of weeks. It’s definitely a bit hot here for such warm, hearty meals, but hey – we have air conditioning and I need to plan ahead so it is what it is.
Tonight (Monday) – White Chicken Chili
Tuesday – Eggplant Parmesan
Wednesday – Shepard’s Pie
Thursday – Grilled Shrimp and Salad (gotta go light after all those heavy meals)
Friday – Pizza

It’s been a couple of weeks since I’ve meal planned and man, can I tell the difference. Basically we don’t eat. Ok, that’s not entirely true, but I don’t end up really cooking much if I haven’t planned a menu. I have a mental block at the grocery store and end up buying fruit, cereal and snacks. Nothing for dinner.
So anyway, I have already made my menu for next week. It doesn’t matter what day we have what. I will shop on Sunday or Monday and go with whatever we feel like on that day or how much time I have to prep. I am just determined to cook and eat yummy home cooked meals.
Here we go:
Parmesan chicken cutlets, mixed greens salad
Fish (not sure what kind yet – basically whatever looks good at the market); avocado, tomato and cucumber salad
Spaghetti and (turkey) meatballs, steamed broccoli, garlic bread
Shrimp w/ mango and cilantro salsa
Chicken taco salad with cilantro ranch dressing

It has been a long five or six months without a meal plan. I was nauseas for the first 4 months of my pregnancy and the past month or so we’ve been working on our kitchen remodel. I finally have a working kitchen again and I have a great appetite. I also feel extremely guilty for totally copping out on any cooking for so long. My family and myself have definitely suffered…and I am so sick of eating out. So, this is the week that I am starting back into my meal planning. I cannot wait to start working in my brand new kitchen!
Monday: chicken taco salad with cilantro ranch dressing
Tuesday: spaghetti and turkey meatballs, salad, garlic bread
Wednesday: shrimp with mango cilantro dressing, salad, corn
Thursday: pizza and greek salad
Friday: chicken curry with chickpeas and tomatoes, rice, zucchini

It’s a new year and I plan on making an effort to get back into my weekly meal planning. I really notice a difference in the way we eat and spend money on food when I don’t meal plan. This week, I am doing a very simple and kid-friendly menu. Here goes:
Monday: Chicken Nuggets ….. but not just any. These are from Jessica Seinfeld’s book Deceptively Delicious and they really are delicious. Here’s the recipe. I make them with pureed broccoli. I will serve a salad on the side for my husband and I, and some cut up cucumbers, tomatoes and olives for my son.
Tuesday:Â Grilled Cheese and Tomato Soup
Wednesday:Â Beef Stew (also from Seinfeld’s book, although it will be the first time I’m trying it so I can’t comment yet)
Thursday:Â Grilled Chicken, Black Beans and Rice, Caesar Salad
Friday: Spinach Pizza, Wedge Salad

Today is Day 7 that I’ve been on the South Beach Diet so I figured I’d post my menu from the past week. I know the food choices are quite small or at least not what I’d normally grab for, so I figured it might spark some ideas for others on this diet. I am also drinking tons of water, which helps keep you feeling full.
Day 1
B: a chunk of 2% cheese, 2 hard boiled eggs
S1: vegetable juice, celery
L: salad, string cheese
S2: nuts
D: turkey chili
D: fudgsicle
Day 2
B: 1 egg, lowfat cottage cheese, vegetable juice
S1: cucumbers and hummus, string cheese
L: leftover chili
S2: peanut butter and celery
D: Salmon, veggies, salad
D: fudgsicle
Day 3
B: 2 veggie sausage patties
S1: tomato juice, string cheese
L: salad with chickpeas and avocado, boca burger
S2: string cheese, cashews
D: salad with grilled chicken
D: fudgsicle with peanut butter
Day 4
B: 1 egg, 1 veggie sausage patty
S1: celery with laughing cow cheese
L: cottage cheese with almonds
S2: celery and hummus, cashews
D: salad
D: fudgsicle/peanut butter
Day 5
B: 1 egg
S1: celery and laughing cow cheese
L: caesar salad, tomato and mozzarella, poached salmon
S2: nuts and cottage cheese

Pretty boring!!!! I can’t wait to get past this phase and move on to the next when I can introduce some fruits and whole grains. I hardly ever feel satisfied. I’m just eating to eat. blech!
