			<content:encoded><![CDATA[<p>I tried doing the South Beach Diet last week and by Friday night I bailed. I had a fun, splurgey weekend and thought I&#8217;d try again this morning. No such luck. I love my fruits, whole grains, cereal, and snacks way too much. I did, however, make a great dinner menu for the week and still plan on following it. I know that I was always looking for ideas and menus so I thought I&#8217;d post this in case anyone was searching.</p>
<p><strong>Sunday: </strong>(turkey)sausage with onions and peppers, mashed cauliflower, salad</p>
<p><strong>Monday:</strong> steak, mashed cauliflower with cilantro and cheddar cheese, caesar salad</p>
<p><strong>Tuesday:</strong> shrimp, black beans, avocado and tomato salad</p>
<p><strong>Wednesday:</strong> turkey chili, salad</p>
<p><strong>Thursday:</strong> tilapia, caesar salad, broccoli</p>
<p><strong>Friday:</strong> steak, zucchini and yellow squash saute, tomato and mozzarella salad</p>
<p><strong>Saturday:</strong> salmon, edamame salad, mashed cauliflower</p>
<p>Oh and a <em>fabulous</em> Phase 1 dessert idea:</p>
<p>Take one &#8220;no sugar added&#8221; fudgsicle and scrape it all off the stick into a bowl. Add some peanut butter. Mix together and eat like ice cream. It is ridiculously delicious. Tastes like a Reese&#8217;s Peanut Butter Cup!!</p>

Ok, that&#8217;s not entirely true, but I don&#8217;t end up really cooking much if I haven&#8217;t planned a menu. I have a mental block at the grocery store and end up buying fruit, cereal and snacks. Nothing for dinner.</p>
<p>So anyway, I have already made my menu for next week. It doesn&#8217;t matter what day we have what. I will shop on Sunday or Monday and go with whatever we feel like on that day or how much time I have to prep. I am just determined to cook and eat yummy home cooked meals.</p>
<p>Here we go:</p>
<p>Parmesan chicken cutlets, mixed greens salad</p>
<p>Fish (not sure what kind yet &#8211; basically whatever looks good at the market); avocado, tomato and cucumber salad</p>
<p>Spaghetti and (turkey) meatballs, steamed broccoli, garlic bread</p>
<p>Shrimp w/ mango and cilantro salsa</p>
<p>Chicken taco salad with cilantro ranch dressing</p>

I was nauseas for the first 4 months of my pregnancy and the past month or so we&#8217;ve been working on our <a href="http://www.hometalkers.com/2008-04-19/remodeling-our-kitchen/">kitchen remodel</a>. I finally have a working kitchen again and I have a great appetite. I also feel extremely guilty for totally copping out on any cooking for so long. My family and myself have definitely suffered&#8230;and I am so sick of eating out. So, this is the week that I am starting back into my meal planning. I cannot wait to start working in my brand new kitchen!</p>

I really notice a difference in the way we eat and spend money on food when I don&#8217;t meal plan. This week, I am doing a very simple and kid-friendly menu. Here goes:</p>
<p><strong>Monday:</strong> Chicken Nuggets &#8230;.. but not just any. These are from Jessica Seinfeld&#8217;s book <a href="http://astore.amazon.com/weddingtalker9-20/detail/0061251348/104-0231038-0655121" target="_blank">Deceptively Delicious</a> and they really <em>are</em> delicious. Here&#8217;s the <a href="http://www.oprah.com/foodhome/food/recipes/200710/food_20071008_nuggets.jhtml" target="_blank">recipe</a>. I make them with pureed broccoli. I will serve a salad on the side for my husband and I, and some cut up cucumbers, tomatoes and olives for my son.</p>
<p><strong>Tuesday:</strong>Â  Grilled Cheese and Tomato Soup</p>
<p><strong>Wednesday:Â  </strong>Beef Stew (also from Seinfeld&#8217;s book, although it will be the first time I&#8217;m trying it so I can&#8217;t comment yet)</p>
