Another SUPER easy brunch thing (it seriously takes like 5 min to throw together and the 20 to bake).......

2-3 cups crushed tortilla chips
2 cups shredded cheddar
1 large tomato, seeded and chopped
1/2 cup chopped onion
1/2 cup chopped green pepper
1/4 cup chopped cilantro
(or, forget all the chopping and buy a container of mild pico or fresh salsa from the produce dept)
6 eggs, beaten

Heat oven to 350. Lightly grease a 2 quart baking dish

put chips in the dish, then veggies, cheese and eggs. Bake for 25-30 minutes or until eggs are set.

The recipe says to cut in squares and serve, but I like to let people scoop out what they want, and then I serve with flour tortillas, extra salsa, extra cheese, sometimes avocado and sour cream... almost like breakfast tacos or migas. I like to serve with potato wedges (from the freezer section)
