You could really do almost anything Heather as far as paint goes.

I did an apple green (like a granny smith apple?) but all of the greens are very "in" right now... sagey tones, blue greens, even greys with a tinge of blue or green. Also, yellow tones are always beautiful in a kitchen - and will bring out the warm colors of your wood. It's really just whatever you like and what you feel sort of "flows" with the rest of your home.

I've even seen people do a grey or a beige and it look beautiful. Then you can add your color with all of your accents: towels, appliances, etc. That could make it easier for you to switch up.

Also, greens and yellows can be considered neutrals so you can still use accent colors with them as well. So have I made your even more confused?!?
