I found some nice looking recipes that I can prepare the night before....

Guten Morgen Eggs presented by The Chalet Inn

This recipe can easily be prepared the night before.

Serves 8 - 10

16 eggs
1 teaspoon nutmeg
dash salt, dash pepper
1 tablespoon parsley (fresh or dried)
1/2 cup sour cream
1/4 cup finely chopped scallions
1/2 cup crisply fried bacon
8-12 fresh mushrooms, sliced
2 cups grated sharp cheddar cheese

Beat eggs and nutmeg well. Scramble in skillet, Add salt, pepper and parsley. Place cooked eggs in greased baking or quiche dish as first layer. Now layer sour cream, scallions, bacon, mushrooms, and cheese. Cover and refrigerate overnight.

Bake in a 300 degree oven for 30 minutes.

*I am going to halve the recipe.
We have 8 people, but 16 eggs just sounds insane. We have plenty of other food too, so I'm not too worried about it being "too small"

Baked French Toast presented by Lord Stocking's Bed and Breakfast

1/3 cup Butter, melted
1/3 cup Brown Sugar and 1t. Cinnamon
1/2 cup chopped pecans or walnuts
8-10 1-inch thick slices French Bread
4 eggs, beaten
1 3/4 cups milk

In a small pan over low heat, stir together the melted butter, brown sugar and cinnamon. Pour into a 9X13 sprayed baking Dish. Sprinkle with chopped walnuts or pecans over the butter mixture. Arrange bread slices in a single layer on top of the nuts. In a medium mixing bowl, combine the eggs and milk. Pour egg mixture over the bread in the baking dish. Sprinkle the remaining pecans or walnuts over the top of bread slices. Cover and refrigerate the mixture for 2-24 hours. Remove cover from Baking Dish. Bake in a 350 degrees oven for 30-35 minutes or until the center appears set and the top is lightly browned. Let stand for about 10 minutes before serving. Can be served with fruit or maple syrup.

Grand Fruit Salad


2 cups green grapes
2 cups sliced strawberries
2 cups sliced plums
1 cup sliced peaches
1 cup orange segments
1 cup sliced peeled kiwi
1/2 cup Grand Marnier or other orange liqueur
1/2 cup orange juice
2 tablespoons sugar

Combine all ingredients in large bowl. Cover and refrigerate up to 8 hours.

*Will make this in the morning

We are also going to have bagels on hand, with cream cheese and sliced cucumbers, tomato, and red onion.

As well as a coffee cake.

For drinks, I am going to make a nice herbal iced tea, lemonade, OJ, water, and if anyone wants coffee (although I know we all drink ours earlier in the morning).
