Gazpacho Recipe??

Does anyone have a good Gazpacho recipe? I am looking to make it this week and have a few recipes out of books, but I've never tried them before. I'd rather make a tried and true recipe if any of you have one!! Thanks.

I found this thread while looking at old posts... and hey, I can give you the recipe of this lovely spanish summer soup!!!

Firstly, there are different kinds of gazpacho, but the general recipe, and my favorite one is the following:

You need very good tomatos, that's why this just works out in Summer... if they're not tasty, don't make it, it won't be good.

You need:
-2kg tomatoes (that's 4.5lbs)
-a small onion
-a cucumber
-a green pepper
-some staple bread, you'll have to soak it before blending it though
-a clove of garlic

Put all the ingredients together and blend them. Strain the soup. Use salt, olive oil and vinegar to dress it. I like it with garlic and vinegar, however some people don't add garlic so that the taste is smoother... this just depends on your taste.

Put it in the fridge, it should be served cold (personally and I must be the only one on Earth, I like it at room temperature, but that's just me )

Gazpacho is my favorite meal in Summer, we make it everyday, in Spain we eat it all the time... it's delicious, healthy and very very refreshing!

That looks and sounds delish! Thanks Maria. My only question is if I leave out the green pepper, does it make a huge difference? I really cannot stand peppers so I'd have to leave it out, but hopefully it doesn't affect the taste too much. Maybe there is another similar textured veggie I can use instead. Any ideas?

Nope don't worry, if you don't like it... you can leave it out. I wouldn't add anything to replace it... when you try it tell me if you liked it!
