Shrimp pasta salad....a must try!
This is delish gals!
Box of Bow Tie pasta (cooked, rinsed, and drained)
Bag of frozen shrimp thawed (remove tails)
One red sweet pepper, cut into bite size pieces
Small onion or to taste, chopped
A sprinkle of red pepper flakes
salt to taste
1can of Chicken broth, divided
3 TBS corn starch
Sautee onion and pepper in extra virgin olive oil until onion is transparent and pepper is tender crisp.
Add 1/2 can chick. broth and shrimp, bring to a boil. Add 3TBS cornstarch to the remaining broth and mix it in. Simmer until desired thickness. Pour over the pasta and mix well. Salt and pepper to taste.
