I thought this would be a cool ongoing thread if we can keep it up. Whoever wants to participate, feel free to jump in whether it be every day or once a week or whatever. Post your plans for dinner of the day you are posting. If possible, include a recipe. I will think about what we're having tomorrow and post back then. Hope some of you will join me! :)

This is a cool thread, but I tell you, most days my dinner will be a salad lol! Today I don't know what I will have but I can tell you what I had last night:
Tuna croquettes with rice.

I have today off from work so when that happens I make a more eleborate meal.
I love making Garlic Parmesean cheese chicken....
I don't have a real recipe just some ingresients that I throw together...
In a flat dish I add the following.....
Garlic powder
onion powder
parmesean cheese(sprinkle kind)
a packet of Good Seasoning Italian dressing mix(dry)
paprika(sp?)
then I drop chicken breasts in it and roll it around....bake on 350 degrees until done....again no time to give cause I just watch it closely......:feed: but it is quite good and its one dish my boys will ask for seconds on .....
well I guess I just talked myself into that one.....:dance:

ok change of plans....went to the grocery store and the beef roasts were on sale. I picked up one and have been slow cooking it since 2pm.....add potatoes and corn.

beef and veggie stir fry with lomein noodles, potstickers
i throw this together:
sautee beef (I buy it packaged as "beef for stirfry)
add a bag of frozen veggies specifically for stirfry. my grocery sells the veggies and sauce combined.
meanwhile, boil a package of ramen noodles. once they are cooked, add to the veggie/meat combo.
I buy frozen potstickers and pop them in the oven.
kind of lame but quick and good!!

spaghetti with meatballs and a caesar salad
I bought a caesar salad kit - the romaine lettuce, croutons, parmesan and dressing
I made the meatballs though:
lean ground beef, shredded parmesan cheese, 1 egg lightly beaten, bread crumbs, 1 small yellow onion (chopped), oregano, fresh ground pepper....mix together with hands and form balls.
heat pan with olive oil and add meatballs till browned. drain oil and add tomato sauce to the pan. simmer meatballs while boiling the spaghetti. mix together and voila! :)
Beef and noodles with mash potatoes! I can't get enough of that since becoming pregnant!
I cook the beef in a slow cooker all day then I transfer it to a pan and add the noodle when the potatoes are just about done. Really easy!

Cheesy Chicken, Sauteed Peas, and Au Gratin Potatoes
Cheesy Chicken
Dredge chicken breasts in butter (healthy I know) and coat with crushed Cheez Its.
Sauteed Peas
Frozen Peas, garlic and olive oil in a pan. I must say that this is a delicious way to prepare peas.
Potatoes are from a box. I swear one day I will really cook again. For right now, it's all about what's quick and will fill the bellies.

Last night, we had glazed citrus chicken, honey-spiced carrots, and broccoli-cheese rice (Lipton mix).
Glazed Citrus Chicken:
Place ~ 1 lb B/S chicken breasts or tenders in baking dish. Squeeze juice from 1 orange, 1 lemon, and 1 lime over chicken. Sprinkle 1 1/2 teaspoons seasoned salt and 1 teaspoon seasoned pepper evenly over chicken (recipe calls for Lawry's brand). Cover and bake at 400 degrees for 30 minutes.
While chicken is baking, prepare glaze. Drain 1 can apricot halves and process in blender. In small saucepan combine processed apricots, 2 tablespoons brown sugar, 1 tablespoon butter, and a dash of nutmeg. Heat until bubbles appear. Reduce heat, cover, and simmer 5 minutes stirring once or twice. Pour glaze over chicken and bake, uncovered, an additional 10 minutes.
Honey-Spiced Carrots:
Peel 1.5 lbs carrots and cut into 1.5 x 0.5 inch strips. Boil water and cook carrots for 3 minutes or until crisp tender. Transfer to colander. In same saucepan, melt 1 tablespoon butter over moderate heat. Add 1/4 cup honey, 1 teaspoon sugar, 1/2 teaspoon ground allspice, 1/4 teaspoon black pepper, and 1/8 teaspoon ground cinnamon. Stir until bubbly. Add carrots and heat, tossing, for 3 minutes or until well coated and hot.

Well last night we decided to have breakfast for dinner.
We had pancakes,bacon and eggs over easy....hubby likes scrambled. The boys think thats just the best thing. My Grandma does that occasionaly too. I just try to come up with different meals the boys will eat. The aren't really picky but there are a few "creations" I've made they just look at me like......:sick: :barf: oh well soon I'll have them plan meals.....

Not sure, but something with Quinoa (keen-wah). Has anyone had this? It is an amazing "ancient grain" that you use as you would rice. I had it at a dinner party a couple weeks ago and it was amazing! It is apparently a near perfect source of protien, great for people who don't eat much/any meat. I have a recipe for a rice dish that consists of onion, blackbeans, crushed red peppers... I may try this with the Quinoa instead of rice. Oh, and you can also eat this as a hot cereal... with brown sugar and cinnamon. Though I have't tried this, I hear its tastey.
Dimes to dollars hubs will prefer leftovers of his pork dish from last night -- which was very, very tastey, but not something I want again.

My Grandparents had their 50th anniversary party today so dh and I will probably just have chips/dip while we watch Desperate Housewives and Grey's Anatomy.
We'll figure out something a bit more healthy for the kiddos. Maybe Spaghetti O's :biglaugh:

I'm embarassed to say this... KRAFT DINNER! (and spinach salad, because I am a grownup and can't get away with KD and hotdogs anymore:)). This is a huge treat for me... maybe a once-a-year deal. Hub hates it, if you can imagine. I love "yellow death" so much, in fact, that I seriously have to take my serving and toss the rest right away... I can seriously see me eating the whole box if I didn't! No satiation whatsoever. Oh, I did share a little with Gloria who of course thought it was meow-valous.

DH and I are going to have brie, apples, and crackers after the kids go to bed :eyebrow:
I mostly just snacked on random stuff: hummus & cucumber, spinach, a frozen whole-grain waffle, chili I made yesterday to commemorate National Chili Day :lol:. Oh, and Annie's mac & cheese.
I'm a-hankerin' for some fruit, though, so when the little man is down for a bit I may go slice up an apple or an orange. Ooh, or a grapefruit!

Yea... I eat very healthy when I am at home with my parents, we eat a lot of fresh fish... but from Monday to Thursday I cook for myself... it's not that I don't eat healthy when I'm alone but I almost don't eat LOL

Well it's Saturday... and I live in the rural Maritimes... so of course I am having baked beans (par boiling as I type)-- definitely an all day thing)! Likely we'll have coleslaw with them, and brown bread.

My family and I went out for italian at lunch. I had fettucine alfredo (so good, but so bad for you) salad, and bread.

We had my sisters 30th birthday party at my Grandma's house. We had baked ham and pineapple. Mashed potatoes with the best gravy...its pineapple juice and some juice from the ham. yum yum(so bad I know)and I made a double layer cake....strawberry and vanilla with strawberry frosting.

Ooh, D, care to share the recipe? :) I'm always trying to make Indian food but I usually end up winging it (which sometimes works, but then I can't recreate it) because I don't like any of the recipes I have.

Gosh, this sounds way more like me than any of the other posts. I guess after reading thru this, I'm totally shocked that DH and I aren't huge. We eat out alllll the time, and when we don't we eat really random meals at home that aren't that healthy. :(
Last night we went to Bennigan's w/ family. I had a BBQ Bacon & Cheese Grilled Chicken Sand w/ fries, and DH had a chicken fettuccini meal. We both had a piece or two of the sampler platter that came out before dinner too, which was mozzerella stix, chicken wings, and potato skins.
Tonight we're going out to eat again b/c it's Friday and we ALWAYS go out on fridays! I'm not sure where yet though.........
I just realized we ate out on Wed. too b/c we both had long days and didn't want to cook! :lol: We ate pizza out.
I'm feeling realllllllllllly unhealthy here. :eek:

PS- I do make up for this by eating salad fairly regularly and having lots of fresh fruit........plus I eat lots of whole grain breads...yogurts.... and we both have very light lunches almost daily at work and we work out pretty regularly. Still, DH never eats fruit/dairy/veggies. We need a better diet, but it's so hard b/c we are both kind of picky. :(

Definitely nothing fancy tonight! I'm eating the quickest thing possible - poor man's pasta primavera (mac & cheese with frozen peas), popcorn & blood orange italian soda (basically a fancy, overpriced version of orange crush). I'd like some fruit, too - maybe a pear or a plum the next time I get up.
