For 4 people...

1 lb cod dried with salt (dry weight)
4 big potatoes
1 1/2 c Olive oil
2 Garlic cloves, peeled
1 medium onion

3 or 4 Eggs

Salt
Fresh parsley, chopped
Olive oil Black olives

Soak the cod fish at least overnight, longer if possible. Carefully remove bones and pieces of skin. Peel and cut the potatoes in long, thick match sticks. Heat the olive oil in a large skillet, add the chopped garlic and onion and fry till the onion is transparent. Stir-fry the flaked cod. Add the potato sticks, previously lightly fried. Season with salt. Let cook for a while over a low fire and meanwhile beat the eggs in a bowl. Scramble over the cod and potatoes and let cook till everything is set together, Sprinkle with the chopped parsley, decorate with black olives. You can eat it with a salad.

Delicious, that's one of my favorite dishes, or my favorite one. You just need to find salt cod, I don't know if you will, it's very typical in Portugal and I made it last night for my boyfriend and friends, they loved it :)
