My husband and I just purchased a convection oven today. I have never used one but he has since he has been cooking at hotel restaurants for years now.
How did you change your recipe times from using a regular oven to a convection oven.
What are the pros and cons that you have come by?

You *might* need to reduce the temperature/time you bake things. I normally drop the temp about 25 F when I use the convection option.
I love the convection ovens here - but we can choose fan/no fan...so I don't always use it. I do use it whenever I'm making a bread type thing/cookies/croissants, etc. I think they give a more even baking and help maintain volume (lift.)

Thank you for the tip.
I will have to read the instruction booklet once our oven comes in, and hopefully it will give us the option of turning the fan off or on as well.
