This week we have some family stuff going on so I'm not sure how many nights I will be cooking. Just in case, I planned out four meals. I know I placed them under specific days, but that's just for convenience sake. The first three are the ones I will make first and the last is only if we're home....

Monday

* Spinach and Cheddar Quiche
* Gazpacho Soup

Tuesday

* Marinated Salmon
* Sauteed Onions and Potatoes
* Garlicky Greenbeans

Wednesday

* Rustic Lasange
* Green Salad

Thursday

* Greek Salad w/ Chicken
* Toasted Pita w/ Hummus

Friday - Sunday

* up for grabs!!!!

Well since we live in the boonies now and are on a self-imposed budget (to counter a summer of frivolas spending) and since we inherited a real garden and as we live in a small town with limited dining options... we are into making meals this fall.

Monday: New potats, fresh beets, corn and roast pork.

Tuesday: Veggie spaghetti, with our own tomatoes... wth am I going to do with them all?? Freeze them I guess...

Wednesday: Baked haddock, Zucchini (somehow! grilled? baked w/ parmesean?), rice w/ black beans

Thursday: Veggies and pasta (a frozen prefab thing)

Friday: Designated restaurant night, to keep us on the straight and narrow the rest of the week.

Saturday: going to cook a vat of white chile to get us thru the week next week.:)

Zucchini (somehow! grilled? baked w/ parmesean?)

Sauteed in a little butter with garlic, salt and pepper is delish and EASY!

ARGH! I totally meant to post my meal plan. Oh well, I'll finish out the week.

Tonight: Chicken and Pastry, Peas, and cranberry sauce

Tomorrow night: Fried Ravioli with Asparagus
