Hey D - Sorry I didn't get around to posting this till now.
1/2 C. Maynnaise
1/2 C. Sour Cream
1/4 C. Parmesan
3/4 C. Mozzarella, shredded
1 t. Dijon mustard
1 t. Pepper
2 C. fresh spinach, chopped (or one box frozen, thawed and squeezed dry)
1/2 red onion, finely diced
1 can artichokes, choppped
Mix mayo, sour cream, parmesan, 1/2 C. of the mozzarella, dijon mustard, and pepper. Mix together with spinach, onion and artichokes. Cover and chill for 2 to 8 hours (the longer the better). Bake at 350*, covered for 50 - 60 minutes. Sprinkle remaining 1/4 C mozz. during last 15 minutes of cooking, leaving uncovered.
Serve with tortilla chips or crusty bread.
