Okay... so when we're tired of Satanic Fudge Brownies (*YUM* and no I don't think I could get tired of these!) here's a cheesecake recipe (I've made a heart shaped one for Vee day). This is totally yummy. And if ya want, you can use a 500 ml (large container) of cottage cheese in place of the cream cheese (cream the cottage cheese really well). Not as good in my opinion, but pretty good and lower fat to boot. This is super simple but looks super fancy.
Cheese cake:
2 sm pks Jello (any flavour)
1 cup boiling hot water
2 pks light or ultra light cream cheese
1 litre (large container) ultra low fat cool whip
graham cracker crumb base
Line large mixing bowl with saran wrap. Spray with vegetable oil. (this will act as the cake 'mold').
Completely dissolve jello in another boiling water. With electric mixer beat in cream cheese, mixing well. Mix in cool whip.
Pour into bowl mold. Tap graham crumb bottom gently on the top of the mold. Chill overnight. Flip cake out of bowl, grabbig plastic wrap to ensure smooth transition.
