Hey, Andrea! I don't think I have *ever* posted in here, so you know this recipe's gotta be GOOD! I've tried several different ones for banana bread, and this is IT!!! Delicious and easy. :)
Cream:
1/3 cup shortening
2/3 cup sugar
1 egg
Combine and add:
1/3 cup milk
1 t. vinegar
1 cup mashed banana (4) - the more ripened, the better!
Add:
2 cups flour
1/2 t. soda
1 t. baking powder
1/2 t. salt
Bake in greased pan 1 hour at 350 degrees.
Let stand 10 minutes, remove from pan. This is important, or it might get stuck!
Perfect timing! I have 2 ziplocs full of over-ripe bananas that we didn't eat fast enough. I've been meaning to find a good banana bread recipe to take care of them. Thanks, Margs!
