Fudge cream pie
Pie crust
1 1/3 c sugar
1/4 c flour
1/4 c cocoa
1 2/3 c pet evaporated milk
3 egg yolks, slightly beaten
1/2 c chopped pecans
2 tbsp butter
1 tsp vanilla
3 egg whites
1/2 tsp vanilla
1/4 tsp cream of tartar
1/3 c sugar
Bake pie crust. Mix sugar, flour and cocoa in 2 qt saucepan. Stir in evaporated milk. Cook and stir over medium heat until thick. Continue to stir over low heat 5 minutes. Stir in a small amount of hot mixture into the egg yolk. Return egg chocolate mixture to the saucepan. Cook and stir until very thick. Take from heat. Stir in pecans, butter and vanilla. Cool 5 minutes. Spread in shell. Set oven at 350 degrees. Put egg white, cream of tartar, and vanilla in bowl. Beat until foamy. Beat in sugar until stiff. Spread meringue. Seal edges. Bake until brown.
