Has anyone sucessfully frozen sweet potatoes?
I bought a huge bag of them last week and figured I may as well bake them off and freeze them for my T-day sweet potato casserole. But I am reading conflicting reports as to how to do it. A few sites say leave them in the skin, wrap in foil, and freeze, and others say take the cooked potato out of the skin and freeze in a container.
Anyone ever do this? If so how did you freeze them?
