Tommy loves chocolate cake with chocolate icing. I'm trying to find him the "perfect cake" to make. I have a few recipes that sound good to me..........I'm a huge chocolate fan but really don't care for chocolate cake or chocolate icing :huh:
So chocolate lovers......tell me whatcha think.
Here's the first one.

Rich Chocolate Cake With Creamy Peanut Butter Milk Chocolate Frosting

Like a chocolate-covered peanut butter cup, this yummy cake blends two favorite flavors in one treat. Chocolate curls are a simple way to decorate.

Ingredients:
2 cups all-purpose flour
1 3/4 cups granulated sugar
2/3 cup NESTLÉ TOLL HOUSE Baking Cocoa
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 cup milk
1 cup water
1/2 cup vegetable oil
2 large eggs
2 teaspoons vanilla extract
1 2/3 cups (11-oz. pkg.) NESTLÉ TOLL HOUSE Peanut Butter & Milk Chocolate Morsels, divided
1 pkg. (8 oz.) cream cheese, softened
1 teaspoon vanilla extract
1/8 teaspoon salt
3 cups powdered sugar
1 bar (2 oz. total) NESTLÉ TOLL HOUSE Semi-Sweet Chocolate Baking Bars, for curls
Directions:
FOR CAKE:
PREHEAT oven to 350° F. Grease and flour two 9-inch-round cake pans.
COMBINE flour, granulated sugar, cocoa, baking powder, baking soda and salt in large mixer bowl. Add milk, water, vegetable oil, eggs and vanilla extract; blend until moistened. Beat for 2 minutes (batter will be thin). Pour into prepared pans. Sprinkle 1/3 cup morsels over each cake.
BAKE for 25 to 30 minutes or until wooden pick inserted in center comes out clean. Cool in pans on wire racks for 10 minutes; remove to wire racks to cool completely. Frost with Creamy Peanut Butter Milk Chocolate Frosting between layers and on top and side of cake. Garnish with chocolate curls before serving.
FOR CREAMY PEANUT BUTTER MILK CHOCOLATE FROSTING:
MICROWAVE remaining morsels in small, uncovered, microwave-safe bowl on MEDIUM-HIGH (70%) power for 1 minute; STIR. Morsels may retain some of their original shape. If necessary, microwave at additional 10 to 15-second intervals, stirring just until morsels are melted. Beat cream cheese, melted morsels, vanilla extract and salt in small mixer bowl until light and fluffy. Gradually beat in powdered sugar.
CHOCOLATE CURLS:
Carefully draw a vegetable peeler across a bar of NESTLÉ TOLL HOUSE Semi-Sweet Chocolate. Vary the width of your curls by using different sides of the chocolate bar.

Moist and Tender Chocolate Cake
Ingredients:
2 cups all-purpose flour
2/3 cup NESTLÉ TOLL HOUSE Baking Cocoa
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup (1 1/2 sticks) butter or margarine, softened
1 3/4 cups granulated sugar
2 teaspoons vanilla extract
2 large eggs
1 cup water
Chocolate Lover's Frosting
Directions:
PREHEAT oven to 350° F. Grease and flour two 9-inch-round baking pans or one 13 x 9-inch baking pan.
COMBINE flour, cocoa, baking powder, baking soda and salt in medium bowl. Beat butter, sugar and vanilla extract in large mixer bowl until creamy. Add eggs one at a time, beating well after each addition. Gradually beat in flour mixture alternately with water. Spread into prepared pan(s).
BAKE for 25 to 35 minutes or until wooden pick inserted in center comes out clean. Cool in pan(s) for 15 minutes; invert onto wire racks to cool completely.
FROST with Chocolate Lover's Frosting

Company Chocolate Cake
Kitchen Konnection - Alice Brown
3 cups light brown sugar
1 cup butter -- softened
4 eggs -- or egg substitute
2 teaspoons vanilla extract
2 2/3 cups all-purpose flour
3/4 cup baking cocoa
1 tablespoon baking soda
1/2 teaspoon salt
1 1/3 cups sour cream
1 1/3 cups boiling water
Cream brown sugar and butter in a large mixing bowl. Add eggs, one at a time; beat well after each addition. Turn mixer on high and beat until mixture is light and fluffy. Blend in vanilla. In a separate bowl, combine flour, cocoa, baking soda, and salt. With mixer on low speed, add dry ingredients alternately with sour cream to butter mixture and mix until just combined. Blend in water. Preheat oven to 350 degrees. Grease and flour three 9-inch round baking pans, or use two 9-inch pans and make cupcakes with the rest of the batter. Bake the cake for 35 minutes and check cupcakes with tester after 20 minutes.
Cake and cupcakes can be frosted with whipped topping. Add 1 teaspoon of vanilla to the topping from extra flavor. Those who are not calorie conscious will enjoy this scrumptious frosting.
Chocolate Frosting
Kitchen Konnection - Alice Brown
1/2 cup butter
3 squares unsweetened baking chocolate
3 squares semi-sweet chocolate
5 cups confectioner's sugar
1 cup sour cream
2 teaspoons vanilla extract
Melt butter and chocolate over low heat. Cool 5 minutes. Combine sugar, sour cream and vanilla in a mixing bowl; add chocolate mixture and beat until smooth. Frost cake and/or cupcakes. Yummy!

LEE'S CHOCOLATE DREAM CAKE
1 Jiffy chocolate cake mix or 1/2 reg. cake mix
1 lg. pkg. chocolate pudding, cooked or instant
1 sm. cream cheese
1 carton Cool Whip
Bake 1/2 chocolate cake mix or 1 Jiffy cake in 9 x 13 inch pan. Cool. Cover with 1 package of chocolate pudding, cooked and cooled.
If you use instant pudding, blend milk slowly into 1 small package of cream cheese before adding pudding mix. Cover with 1 carton Cool Whip. Chill before serving.
CHOCOLATE BUTTERCREAM ICING
1-2 tbsp. milk
1 tbsp. (2 oz.) cocoa powder
6 tbsp. (3 oz.) soft butter
3/4 c. (6 oz.) confectioners' sugar
Put the butter in the bowl and cut into small pieces. Beat hard with wooden spoon and stir until soft and creamy. Sift the sugar and cocoa powder into the bowl a little at a time, mixing well with butter. Then stir in the milk.

I love moist cakes... go for it!
My grandmother usually buys the box cake and makes her own cream cheese iceing... she adds a little Kalua (sp?) to the cake mix, and it is SO good!

They all sound fab! I LOVE chocolate cake. I made the cake on the back of the Hershey's chocolate cocoa can, (http://hersheykitchens.hersheys.com/recipes/detail.asp?id=184)the cake and the frosting were soooo good! Here's another tried and true that is really yummy and moist.

Preacher's Chocolate Cake

1 c brown sugar
1 c sugar
1/2 c shortening
2 eggs -- beaten
2 c flour
1/2 tsp salt
2 tsps soda
1/2 c cocoa
1/2 c buttermilk
1 c boiling water
1 tsp vanilla
Buttercream Frosting:
1 lb powdered sugar
1/2 c butter -- softened
1 tsp vanilla
3 tbsps cream -- (2- 3 tbsp)
Cream sugars and shortening; add eggs and beat very well. Add dry ingredients alternatelly with milk, beating well after each addition. Fold in boiling water and vanilla.
Pour in a greased 13x9 pan and bake 30-35 minutes in a preheated 350 oven.
Cool cake for 20 minutes. Invert onto serving platter. Cool cake completely. Frost with buttercream frosting.

:lick: I'll have to try the preachers cake for Christmas! I done the tender and moist one w/ the butter cream. I had one small slice and Tommy inhaled the rest :D
I'm going to start making him a chocolate cake every Friday so eventually I'll try 'em all :p

Okay you guys. Cut it out! I am supposed to be on a die-it here... and right now I could commit murder for a slab of chocolate cake (and OMG, that first PB one sounds good). I'd say they are all winners tho. Mmmmmmmmmmm Mmmmmmmmmmmm.
