2 cups yellow cornmeal
2 cups flour
1 1/2 tsp. salt
1/2 tsp. baking soda
2 tbsp. baking powder
2 eggs
1/4 cup sugar
1/4 cup vegetable oil
2 1/2 cups buttermilk
1/4 cup butter
2 cups grated old cheddar cheese
2 1/2 cups corn
6 tbsp. chopped serrano or jalapeno chillies
Preheat oven to 350F. Mix cornmeal, flour, salt, baking soda and baking powder. In a separate bowl, whisk egg, sugar, oil and buttermilk. Coat a large cast iron skillet with vegetable oil and set over medium heat. Add butter. Quickly stir together wet and dry ingredients. Do not overmix. Fold in cheese, corn and chillies.
Add batter to hot pan. Place skillet in oven and bake until light brown around the edges, about 25 minutes
