I made this as a side the other night - it was so good and super easy. Could be modified very easily too. Next time I will serve as a main course over salad greens with a grilled chicken breast.
Tomato and Bread Salad
2 TBS water
2 TBS low fat mayonnaise
1 TBS lemon juice
Salt and pepper to taste
1/4 tsp tabasco
2 cups toasted, cubed, bread (white or sourdough, preferably)
2 cups halved cherry or grape tomatoes
½ cup chopped red onion
½ cup chopped flat leaf parsley
1 avocado, diced
In a small bowl, mix the water, mayo, lemon juice, tabasco and salt/pep with a whisk. Toss with the remaining ingredients.
ETA: I forgot to list tabasco as an ingredient!
