It is Asparagus season and my family and I love it! Anyone have some fresh (or not so fresh) Asparagus recipes to share?
Here is a recipe my whole family loves. I have a bunch more Asparagus recipes. So if there is an interest I will post them...
Pasta With Asparagus Pesto
1 lb penne or other tubular pasta
1 lb Asparagus
1/4 cup pine nuts
3 medium garlic cloves
1/2 tsp salt
1/2 cup extra virgin olive oil
2 oz freshly grated Parmigiano-Reggiano (approx 2/3 cup)
Bring about 5 quarts salted water to a boil for pasta.
Have a bowl of ice water ready! Trim woody ends from asparagus. Cut asparagus stalks crosswise into 2-inch pieces, reserving tips and steam, covered, until just tender, about 1 minute. Immediately transfer asparagus to ice water to stop cooking. Drain asparagus well in a colander and pat dry.
In a food processor pulse pine nuts and garlic with salt until finely chopped. Add asparagus and oil and pulse until asparagus is coarsely chopped. Transfer pesto to a large bowl and stor in Parmigiano-Reggiano. Cook pasta in boiling water until al dente. Reserve 1/3 cup pasta cooking water and drain pasta. Add pasta and reserved cooking water to pesto, tossing to coat, and season with salt and pepper.
Serves 4 as a main course.
Note: Cooked chicken added to this dish is GREAT!

Roasted Asparagus With Balsamic Browned Butter 9/01

40 asparagus spears -- trimmed (about 2
1 lbs )
Cooking Spray
1/4 teaspoon kosher salt
1/8 teaspoon black pepper
2 TBSP butter
2 TSP low sodium soy sauce
1 TSP balsamic vinegar
1.Preheat oven 400
2.Arrange asparagus in a single layer on baking sheet; coat with cooking spray. Sprinkle with salt and pepper. Bake for 12 minutes or until tender.
3.Melt butter in a small skillet over medium heat; cook for 3 minutes or until lightly browned, shaking pan occasionally. Remove from heat; stir in soy sauce and vinegar. Drizzle over asparagus, tossing well to coat. Serve immediately.
Yield:8 servings (5 spears)
I've seen some good-looking asparagus at the store lately, so maybe I'll pick some up and try one of these! A friend of mine made some yummy balsamic asparagus by just sauteeing it in balsamic vinaigrette salad dressing. I don't have any of that, but I do have balsamic vinegar. :lick:

At our house, we like to mince fresh garlic, and mix that with some olive oil, black pepper, and a touch of garlic salt and marinate the asparagus in it before grilling.
Another way that we had tried was to marinate it in Italian dressing.

I only like canned aspargus... and I put mayonnaise on them, that's the only way I eat them.

Another way that we had tried was to marinate it in Italian dressing.
I would love to try this recipe. I've only had it steamed. Kind of gross actually but this sounds good

I generally just sautee my aspargus. I like it tender crisp and I always seem to cook it too long if I steam it. I generally use olive oil, salt, pepper, and a dash of rice wine vinegar at the end. I do have an awesome breakfast casserole recipe though. It sounds a bit funky but it's really good.

1/4 cup margarine
1/2 pound fresh asparagus -- trimmed and cut into 1 inch pieces*
1 medium bell pepper -- chopped
1 medium onion -- diced
1 loaf French bread -- cubed (about 8 cups)
2 cups shredded Cheddar cheese*
1 cup ham -- cubed
1/3 cup Sue Bee Honey
8 eggs
2 1/2 cups milk
1/2 teaspoon salt
1/2 teaspoon pepper
In medium skillet, sauté asparagus, pepper and onion in margarine for 3 to 5 minutes.
*Broccoli may be substituted for the asparagus.
In a greased 9×13-inch pan, layer bread cubes, ham, 1 cup of the cheese and sautéed vegetables.
*Your favorite cheese may be substituted for the Cheddar.
In a medium bowl, beat together remaining ingredients (except for cheese) until well mixed.
Pour mixture evenly over layers and sprinkle with remaining cup of cheese. Refrigerate overnight. Bake uncovered at 350 degrees for 45 to 50 minutes, or until golden and puffed.
