Just ran across this recipe in some old stuff of mine and thought I'd share. These are delicious as a Sunday Lunch!

Hot Chicken Sandwiches

16 slices very thin bread
2 cups chicken -- chopped cooked
1 medium onion -- minced
2 eggs - hard boiled and chopped
1/2 cup mayonnaise
1 can mushrooms (4 oz)
1 can cream of chicken soup
8 oz. sour cream
Cut crusts off bread; butter both sides.
Places 8 slices on cookie sheet.
Mix chicken, onion, eggs, mayo and mushrooms (do not drain mushrooms)
Spoon misture onto bread slices; cover with other 8 slices of bread (buttered on bothsides)
Mix soup and sour cream and spread over top and sides of sanwiches as you would ice a cake. Sprinkle with paprika.
Bake 325 for 35-40 minutes, watch closely. Serve with sprig of parsley on top.
