This past Sunday we had a belated Mothers Day breakfast for my stepmother, I made this dish and it was really yummy. Just a bit more decadent than regular ol' scrambled eggs. I doubled the recipe, but kept the scallions at 4, it was onion-y enough with just that. I also cubed up my cream cheese very small and nuked it for 30 seconds before adding it to the eggs. Quick, easy, and very yum, everyone here loved them.

SCRAMBLED EGGS WITH CREAM CHEESE AND SCALLIONS


Can be prepared in 45 minutes or less.
4 scallions, chopped fine
1 tablespoon unsalted butter
4 large eggs
2 ounces cream cheese, cut into bits and softened

In a small non-stick skillet cook the scallions in the butter over moderately low heat, stirring, until they are soft. In a bowl whisk together the eggs, the cream cheese, and salt and pepper to taste, pour the egg mixture into the skillet, and cook the mixture over moderate heat, stirring, for 3 to 4 minutes, or until it is cooked through.

Serves 2.

That sounds yummy! Can you really taste the cream cheese, or do you just notice the creaminess that it adds? Reason I ask is that hubby does not like cream cheese, but he'll eat foods with it as long as its not a strong flavor in the recipe.

You notice the creaminess, but it does add a slight cream cheese taste. They are pretty quick to make, try a small batch and see what he thinks. ;)

If he doesn't like it, well, tough luck on him, huh? lol
