I have this great and easy appetizer that anyone can make! I've brought these to parties and they were a hit. Although, they're kind of expensive depending on how many you make.

Cut avocados in half and take the seed out. Then mix together small salad shrimp, chopped cucumber, onion, celery, mayo and salt and pepper - you can usually eye all these ingredients. You just want to chop everything as to make like a filling. Then scoop it into the avocado halves -- add a little salt and pepper on the top for looks and taste and there you have it...it's so good!! It's almost a meal in itself.

Something that has become a must have at every party: quesadillas! Having lived in California most of my life and loving California mexican food (much different than authentic!) I have introduced many east coast folks to the joy of these spicy treats....
get flour / corn tortillas, pre-grated mexican mixed cheese, fresh salsa, boneless chicken, chop up some onion and pepper. The key is I grill them on the bbq! Serve with salsa and guacamole, sure to be a hit!
I made for the 4th of July ~ even the most ungrilled folks had fun preparing and eating!

I, too am from CA -- and I agree, I lOVE the mexican food there. Here in CO, theres nothing good. I will have to try your recipe. Where abouts did you live in CA. I grew up in West Covina, then lived in San Diego, then I bought a house in Ontario.
