I LOVE to cook -- I've been saving for five years to remodel my kitchen into a gourmet kitchen...I have about 23,000.00 saved - I need about 20,000.00 more :(

Anyway, I love to cook for people especially. One of my husbands favorite things that I make is my Fresh Herb Chicken.

All you do is get a whole chicken -- wash it, clean it, take out their guts and wash the inside. While I'm cleaning I have about 2 sticks of butter melting on the stove. Then I dry the chicken and let him sit awhile. Then I use all fresh herbs -- I use rosemary, thyme, marjarome, sage and garlic minced. I chop everything really fine and salt and pepper - then place in the butter...cook it, stirring it around for ten minutes and then take a basting brush and brush it all over the chicken, inside and out. I also put red potatoes in the too and put the seasoning on them too. Anyway, I pour the mixture inside and out....what an amazing taste. I get such great reviews on the dish. Then, I make a really awesome gravey fromt he drippings and then I will also add chicken broth. I don't know....I swear it looks like something from a magazine and the taste is remarkable. Yummm!! I'm getting hungry. Oh and then I fill the cavaty of the chicken, neck too, with red, yellow and green bell pepper. Also stuff it with onion....oh my....amazing. NOt kidding....it's the best taste I ever had. Love it! Hope you will to!

Your chicken sounds delish! I have never thought of the herb/butter mixture on top of the skin, usually I stuff the cavity and put the butter under the skin, I'll have to give your method a try, roasted chicken is one of my favorite dishes.

How long do you roast your chickens for? I usually roast high 425-450 ala the Barefoot Contessa method. :D
