Another moronic question, but chicken stock is the water that the chicken is cooked in, right? Can I use chicken broth instead?
I have a recipe for Chicken Picatta with lemon scented angel hair pasta and it calls for chicken stock.

Yes to both questions.
I almost never make my own stock.. I find its a waste of time, and with the quality out in cans now, I can get just as good at the store. Same with beef, fish and veggie stock also.
Some people might swear that the canned stuff is garbage, but if you don't tell them its canned, they can't even tell a difference. But thats just my opinion (and I was a chef for Marriott at one point, so it does count at least a little bit) ;D

I'm glad I can use broth. I HATE boiled chicken :gag: If it isn't baked or grilled I can't stand chicken period. ICK!
BTW.........Arby's new chicken salad wraps are pretty darn good :lick:

To make stock, you don't have to boil the whole chicken. You can roast a chicken, and then just boil the carcess of whats left and make stock from that. But canned tastes just as good, without all the hassle, and its not expensive at all (huge plus!)

That's what I do, when I make a chicken enchilada for dinner, sometimes I buy the pre-roasted deli chicken, then save the bones for stock. I also save up wing tip bones when I make chicken wings during football season in the winter, T pulls them out and says, "um, what do you plan on doing with these?" because its these little tiny bones, no meat and I have bags of them. :biglaugh:
Which canned broth is your favorite Farmgirl? I dislike the Swanson alot, so far College Inn is my favorite.

LOL @ you for saving those bones! Thats pretty funny. I almost never have bones to save :)
I prefer the College Inn too, with the Jewel generic brand coming in next. I do like the Swanson kind, but around here is seems so expensive compared to everything else.

Its an old Sara Moulton trick I learned. :D I save wings, necks, backs, you name it. :D I'm sure I have just caused the vegan population on the board to now :gag:

I made it today used Healthy Choice broth and that meal was delish :lick: The angel hair pasta was my fave.....YUM! Next time I'll double the amount of garlic and lemon juice in it tho. It had a hint of both but I'm big on lemons and garlic. I give that meal :thumb2: :thumb2: 2 thumbs up and a jiggle :moon:
