I love the huge bakery muffins that all the coffee shops sell now. I want to know how to make them at home. I can't seem to use a regular muffin pan, get the muffins to have huge tops and be cooked in the middle. Can I make them in a regular oven or do I need a conveciton oven? Does anyone have a great recipe? Thanks!:confused:

Their secret is that they use larger size muffin cavity pans than sold in kitchen stores for consumers. I have lots of muffin recipes, but unless you use a large size pan you won't get the humungous muffins you buy in specialty shops. ;)

Thanks for replying to my question about the big muffins. You say I need a big cavity muffin pan - do you mean one of those ones that have cavities about 4 inches in diameter or a different kind of commercial muffin pan? I really want to make muffins with smaller bottoms and big round tops. If you know of a good muffin pan that I should buy for the bakery style muffins please let me know. I love blueberry-oatmeal muffins or cranberry muffins.

Hey Tangleberry, have you seen the muffin tins that are for making "muffin tops"? They have thin bottom halfs, but allow for huge tops (the best part IMO). I've seen them around... I'd imagine even wallymart would have them.
