My daughter and I were discussing this and she said there was a formal 'chef's name' for what I call using a meat mallet and pounding out the food. Is she right? and if so, what is its official name.

There probably is some strange fancy name for it, but I've always just called it pounding or tenderizing. :)

Hmmm...good question. All our family recipes refer to this type of preparation as "swiss", i.e. "swiss steak". Could it be someone Swiss?:lol:
