I recently went apple picking and now I have all these apples I don't know what to do with. Does anyone have a good recipe (other than apple pie) using apples?

You could make homemade applesauce. I don't have a recipe, but I'm guessing you would just simmer them in a bit of water with some cinnamon and sugar and then mush them up. Or you could make stewed apples. Pretty much the same concept as the applesauce only don't cook them as long and maybe use brown sugar to sort of carmelize them.

I've seen recipes for Apple cake too. Like a banana cake only with apples.

We went picking too... so I know what you're talking about to be innundated with apples. It was so fun! We got carried away.:)

Just tonight I made apple crisp. Delish.

I also want to try a salad I had at a restaurant recently: it was lettuce, radish, red cabbage and tomatoes, then topped with curried chunks of chicken and apple. It was AMAING! Then served with tziki salad dressing. I don't have a recipe, but when I try it (and if I get it right :)) I will pass it on.

How about baked apples?

Pork baked in the oven with apples and onion slices is also very good.

You could make Apple crumble, applesauce, candy or carmel apple, you could put apple in with your hot cooked oatmeal. Another idea is cut the apples in slices & put peanut butter on it.

Apple Butter - just find a recipe that you are comfortable with... crockpot, stovetop, quick cooking slow cooking .... there are so many ways to make it, its best to find your own. (I prefer the crockpot kind myself though - its just easier)

Apple slaw

1/2 cup bottled coleslaw dressing
2 teaspoons apple cider vinegar
1/4 teaspoon celery seed
1 (16 ounce) package coleslaw mix OR 6 to 7 cups shredded cabbage/carrot mixture
1 large apple, cored and finely diced

Blend together coleslaw dressing, apple cider vinegar and celery seed. In large bowl, stir together coleslaw mix and diced apple. Pour dressing over and toss to combine. Cover and refrigerate until serving.

For a twist on traditional harvest slaw, omit apple cider vinegar and celery seed and replace with 2 teaspoons peanut butter and 1/4 teaspoon chili oil. Prepare as directed above.

You can put apples in just about everything - I love apples!

One of my favorites is Johnny Appleseed Burgers -

1 pound ground turkey
1/4 pound bulk pork sausage
1 large egg white
1/4 cup fine dried bread crumbs
1/2 cup peeled and finely chopped tart apple
1/4 cup minced onion
1 tablespoon minced fresh ginger
4 toasted hamburger buns

Apple cabbage slaw (recipe follows)
Salt

Mix together turkey, sausage, egg white, bread crumbs, apple, onion, and ginger. Shape into 4 equal-size patties, each about 3/4 inch thick. Lay patties on a lightly oiled grill 4 to 6 inches above a solid bed of medium-hot coals (you can hold your hand at grill level for only 3 to 4 seconds). Cook, turning as needed, until patties are no longer pink in the center (cut to test), 15 to 20 minutes.

Place patties in hamburger buns; top with equal amounts of slaw and add salt to taste. Serves 4.

Per serving: 404 cal. (33 percent from fat); 28 g protein; 15 g fat (4.3 g sat.); 36 g carbo.; 596 mg sodium; 94 mg chol.

Apple cabbage slaw. Mix together 1 cup finely shredded red cabbage, 1 cup very thinly sliced unpeeled tart green apple, 3 tablespoons orange juice, and 1 tablespoon balsamic or red wine vinegar.

Deep Dish Apple Crisp

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
3 lbs. granny smith apples ( 6 apples) (or -- yellow delicious,
or any combination)
macintosh
Juice of 1 lemon
1 Tbsp cornstarch dissolved in a little water
1/2 cup white sugar (use a little more if using
all granny smith)
1 Tbsp cinnamon (divided) -- (1 to 1 1/2)
1/4 tsp nutmeg -- (1/4 to 1/2)
1 cup flour
1/2 cup dark brown sugar
1 Pinch salt
5 Tbsp unsalted butter
1/4 cup chopped almonds (optional)

Preheat oven to 400 degrees. (375 degrees for dark pans).
Peel and core granny smith apples. Slice thin.
Toss with lemon juice.
Mix dissolved cornstarch, white sugar, 1/2 amount of cinnamon, and nutmeg.
Add to apples and toss.
Arrange in a 1 1/2 quart casserole dish. ( 8 x 8 baking pan)
Mix flour, brown sugar, remaining half of cinnamon, salt and butter until crumbly.
Combine with almonds (optional) and sprinkle mixture over apples.
Bake at 400 degrees (375 for dark pans) for 40 - 45 minutes.

Tip:
If apple crisp is too tart, sprinkle with confectioner's
sugar.

Baked Apple French Toast

3 large green apples
1 stick -- (1/2 cup butter)
1/2 cup brown sugar -- (or more)
12 ounces cream cheese
12 slices firm bread (your choice -plain white -- wheat French,
sourdough, cinnamon or your favorite)
8 eggs
2 cups milk
2 tablespoons vanilla
Cinnamon


Set rack in lower third of oven and preheat oven to 350F. Butter a 13x9 inch baking pan. Core and cut the apples into thin wedges, leaving the skin on (may remove skin).
In a skillet, melt butter with brown sugar and 1 tablespoon water. Add the apples and cook, stirring for 2 to 3 minutes. Transfer to the baking dish and let cool.

Cut cream cheese into cubes and arrange evenly over the apples. cut the slices of bread in half diagonally and layer over the apples to cover the whole dish.

In a large mixing bowl, beat together eggs, milk and vanilla. Pour the egg mixture over the bread, taking care to dampen all the bread. Sprinkle with cinnamon. Bake for 40 to 50 minutes, until golden and puffed. Let cool 10 minutes before serving. (This reheats beautifully).
