Dunno if this is a Southern thing or not. They're round, peanutbutter in the middle and chocolate on the outside. Tommy is addicted to them and is paying up to $10 a plate. I figured I could make some extra dough if I learned how to make them :D I just wouldn't let him in on that secret :p
Anyone have a recipe for them?

I found this online for you. They sound yummy and really easy!!

Peanut Butter Buckeyes Recipe

1 c BUTTER
1 pk 16oz powdered sugar
1 12oz crunchy peanut butter
1 Block (4oz) paraffin
1 pk 12oz semi-sweet chocolate ch

Combine butter, sugar and peanut butter in a medium bowl; blend till
smooth. Roll into 1 inch balls. chill. Place paraffin and chocolate
chips into top of a double boiler and melt over hot (not Boiling)
water. Coat balls by dropping one at a time. Place on waxed paper to
cool makes 5 dozen

I make these every year at Christmas time; we all look forward to them so much, that sometimes I'll make them earlier.

Peanut Butter Balls/Buckeyes

1/2 cup butter
2 cups peanut butter
1 lb. confectioners sugar
2 cups Rice Krispies, crushed

Combine ingredients, form into small balls and cool in fridge until firm. Dip in chocolate dip. Let cool on foiled or waxed papered pans, until chocolate hardens. (a good few hours)

Chocolate Dip

1/4 slab parafin wax
1 8 or 9 oz. chocolate bar
1 cup choc. chips

Combine all over low heat - do not boil. Keep warm and on stove while dipping.


I've found that if you put too much parafin in the chocolate, you can taste the wax in your cookie. So what I usually do now, is melt the chocolate first and then rub the parafin slab against the bottom of the pan so you can see it melting, and it will thin up your chocolate a bit. I only melt a little bit, probably 1/8 of the whole slab. Dipping the choc. is a bit of a pain, so having a helper is a big bonus. (I usually have hubby help me!) But it's SOOOO worth it in the end! ;)

Thanks girls! Tommy mentioned today that he needs a couple more plates.......I was thinking "hehe, I need $20 too, so we'll both be happy"

I tried some the other day that my friend's mom made. Instead of chocolate as the coating she used butterscotch. It was VERY sweet but really good!
