A new acquintance brought this to a dinner party and gave me the recipe on a post-it at the party, but didn't give me the name, so I am giving her credit for it. I took it to 4 parties over the holidays and all wanted the recipe. It is so easy and light, almost healthy.
1/4 C. butter
1/2 C. sugar
1/4 C. plain or vanilla yogurt
2 eggs
1/2 t. almond extract
1 C. flour
1 t. Baking Powder
sliced peaches (I used canned, sliced thinner)
assorted berries ( I used Costco frozen mixed berries)
Blend the butter and sugar, then add the yogurt, eggs and extract. Mix in the dry ingredients and pour into greased 8" Sq. pan. Arrange the peaches in rows and then add (about 2/3 C) the berries over all. Sprinkle with cinnamon and sugar and bake in a preheated 350 degree oven for 25 minutes.
