View Full Version : Eggplant Parmesan or Parmigiana if you're cool

C made this great Eggplant Parmesan tonight that tasted equal or better than restaurant quality. The recipe came from a healthy cookbook, but she said she added her own touch.

Eggplant Recipe:
Take an eggplant slice it up thin.

Coat with Egg and breadcrumb mixture.

Broil eggplant pieces on a greased cookie sheet for 5 minutes each side.

Spread half cup of tomato sauce on bottom of a 13x9x2 pan or baking dish (whatever you make lasagne in)

Place a layer of eggplant pieces in sauce.

Add shredded mozzarella.

Add parmesan.

Repeat layering of sauce, eggplant, cheeses, and end with sauce.

Cover with foil.

Bake for 30minutes at 350degrees.

:lol: Isn't he good at relaying recipes? LMAO

Really though - this eggplant parm is so delish. I made it again the other night, but instead of broiling the eggplant slices, I fried them. It was incredible!!

Oh Yummy! I do love eggplant parmigiana. Now, I need a recipie for baked ziti.. I mean I know how to make it, but I want a make it a little different, any suggestions?

ooooh... gotta try that eggplant.

Suzie, here's my ziti recipe...

(16 ounce) package dry ziti pasta
1 pound lean ground beef (a lot of times I will use hot italian sausage, casing removed instead)
1 onion, chopped
2 (28 ounce) jars spaghetti sauce (if I don't feel like making homemade, I use classico spicy red pepper sauce)
6 ounces sliced provolone cheese
6 ounces sliced mozzarella cheese
1 1/2 cups sour cream
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh basil

DIRECTIONS:
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
In a large skillet, brown beef over medium heat. Add onions; saute until tender. Drain off fat and add spaghetti sauce; simmer for about 15 minutes.
Preheat oven to 350 degrees F (175 degrees C).
In a lightly greased 2 quart baking dish, place about half of the pasta (I always put a little bit of sauce in the bottom of the pan before I add the pasta so that the pasta doesn't stick); top with a layer of provolone and mozzarella cheese slices. Spread on a layer of half the spaghetti sauce mixture and sour cream.
Cover with remaining pasta, cheese and sauce; sprinkle a layer of Parmesan cheese and fresh basil.
Bake in preheated oven for about 30 minutes or until cheese and sauce are bubbly; serve.
