Hey kiddies! In a couple of weeks we are hosting a dinner partay-- the theme is Mexican. It's going to be potluck, but as hosts, hub and I would like to come up with a few dishes. Ideas?
In particular, what is a traditional Mexican dessert?

Sopapillas!!! Mmmmm!!! :)
They're actually very easy to make, too...

Mexican, my favorite!
We had a party w/ a Mexican theme, and we served yummy guacomole and chips, chicken chimichangas, enchiladas, refried beans, Mexican rice, and lots of :tequila: with our margaritas! I used Csara's enchilada recipe (which is delicious). I can't help you with the dessert part, since our dessert consisted of more :tequila:!
Chicken Chimichangas
1 onion
can chicken broth
2 - 2 1/2 chicken breasts
jar salsa
3 bacon strips (optional, but it does make it tastier yet unhealthier)
2 cups shredded Mexican cheese
black beans (optional)
burrito size flour tortillas
sour cream
guacomole
In large pot, put broth and chopped onion. Add chicken and bring to boil. Poach chicken until fully cooked. While chicken is poaching, cook bacon in large skillet. Take bacon out, and discard or use for whatever. (you're using the grease here, remember this is optional but it does make it taste better). When chicken is done, reserve broth, and shred chicken into pieces using two forks. Add to skillet. Add 1/2 to one full jar of salsa to chicken and mix, and add a ladle of reserved broth to mixture, stir and simmer until mixture isn't soupy.
Warm tortillas in microwave (follow directions on package). Take one tortilla, lay flat, and add chicken mixture, shredded cheese and black beans. Fold up.
Fry in deep fryer. Serve with dollop of sour cream and/or guacomole.
If you don't have a deep fryer, I'm sure you could do it on the stove top in oil.
I'd say that some traditional Mex desserts would be flan or tres leches cake (http://www.gourmetsleuth.com/treslechescake.htm).
This site (http://www.mexgrocer.com/mexcocina-apr2.html) looks like it has some good recipes, including sopapillas, flan, and a margarita pie that sounds yummy!

Flan, flan, flan my favorite!! There are lots of different varieties but it is very traditional mexican and tastes really good!! Sorry, no recipes here I just wanted to put in my :2cents:

YUM! Sounds so good. I could really go for a margarita right now. Do they make them virgin? lol
