Easter will soon be approaching. It is early this year with it being on March 27, so I am trying to put things together early. What do you serve during Easter? I am going to have either a lunch or early dinner get together with kids and adults.

Easter already :argh: ! I almost fell off my chair when my daughter told me Easter came early this year. I think it's a little too early, I am still recouping from Christmas. What a mess that turned out to be. But anyway, onto the Easter menu.
Traditional, the Fritta, (hey look at that, I know how to spell it now). Thats the night before to break the fast. A fresh ham, roasted tatta's, veggies, a salad and this year I am putting baked ziti on the table.
There is a lot of things different this year. Dinner is not at my house, I am having it at my daughters, of course I am still cooking, and she will help or else she will not EAT LOL. And none of my sister's nor my nephews not even my son will be there.
I am very upset about this, but, this was everybody's choice. Like I said Christmas Eve and Christmas day was a horror and I had both my sisters here, and my daughter and by Christmas day I was ready for a vaction. Well anyway thats a whole nother thread.
This year I am also going to try my hand at the old fashoined Italian Cheese Cake, oh yummy. I'll let ya all know how it turns out....

Sure I could post it! here it goes...
1Large container of 3lb's Ricotta cheese
2 cups sugar
8 egg yolks
1/2 cup sifted all purpose flour
1/2 cup heavy cream, whipped
Graham cracker crumbs
1 tsp. vanilla
8 egg whites
1 tsp. grated lemon rind. (some people like it with lemon, some dont, I always make 2 cakes one with lemon one without).
Preheat oven to 425 degrees. Beat drained ricotta until smooth, gradually add 1 1/2 cups sugar and egg yolks, beating after each addition. Beat flour, lemon rind and vanilla. Beat egg whites with remaining sugar until stiff,combine with whipped cream and flold into ricotta mixture. Turn into a 12 inch spring form pan which has been buttered and sprinkled with graham cracker crumbs. Bake 10 minutes, lower oven to 350 degrees and bake 1 hour 15 minutes. Turn off heat and aloow to cool in oven with door closed. It should get golden brown on top.

I forgot to mention, that the 2 most important things are, draining the ricotta. In a large bowl, cover with cheese cloth, and be sure to drain over nite. You will be surprised all the liquid that comes out. I use a big pot and put it in the fridge overnight.
The other thing is to make sure you leave the cake in the oven to cool, but dont forget to turn the oven off! Oh, yes I have made this mistake yuk what a mess.
Not to mention all your time and effort down the drain.
