Does anyone have a tried and true favorite recipe for stuffed green pepers?
I make a new one every time, haven't found the perfect one yet.

I par boil the prepared peppers until they are partially cooked. Then I fill them with a meatball mix, mixed with a handful or so of uncooked rice.

Meatball mix:
1# Ground Beef
1/2# Ground Veal
1/2# Ground Pork
2 eggs
3 cloves minced garlic
3/4 cup parmesan cheese
2 tbsp parsley
2 cups Italian bread crumbs
1 1/4 cups water
2 tsp salt (to taste)
½ tsp pepper (to taste)

I thought stuffed peppers had rice too....same combo as mentioned above(well minus the veal) but add rice. Almost like spanish rice but stuff a pepper....Now that it cooling down here in NY I may give it a try.

I love stuffed peppers. My wife hates peppers though so I never eat them. Everyone cry a tear for me. Maybe I won't get in trouble when Csara reads this. :gl:

Hehe J, why don't you guys make some other kind of stuffed veggie (portobello mushroom, tomato, acorn squash) for C and then put the same filling in a pepper for you? :)

Funny (well kind of, also rather touching) hot pepper story-- last weekend I made them (thanks to this thread which gave me the idea) for when my sis and her boyfriend were here... just standard rice, chicken, corn, blackbeans and salsa. But during dinner I noticed sis's boyfriend get kind of teary-- I wondered if they were too hot? But nope. He was balling! Apparently the peppers tasted just like what is mom used to make, and he hadn't had them since she died. He was embarassed and so we teased him a bit (ie hoped that he didn't have a dead relative connected to the dessert of lemon roulade) but it was touching, and I honestly felt rather bad-- I didn't mean to make him cry!:) Anyway, isn't it funny the connections we can have to certain foods...

As for stuffed Acorn squash-- delish! I do this often, and it would be a cinch to switch up pepper ingreds.

That's a sweet story! Sometimes some tastes just come to my mind and they remind me of sweets I used to eat as a child... and that I won't find around here.

I saw a recipe on tv the other day... with Italian green peppers, ground veal, garlic, salt and pepper. The lady fried the peppers, then she filled them with the cooked meat, and then made a sauce with tomato sauce and oil... she cooked the filled peppers in the sauce for a few minutes. It looked good... but I don't know the amounts for the exact recipe...
