I have three chicken breasts that need to be cooked..what can I do with them??? Any easy and simple ideas? Thanks!

Pound chicken breasts until 1/4 inch thick and dip in egg (or egg beaters/egg whites) then dip in bread crumbs. I use Vigo original golden breadcrumbs (in yellow can) and mix some garlic powder, oregano, thyme, onion powder and black pepper in. Then bake at 400 for 20 minutes. Take out of oven and top with sliced fresh tomatos (or sauce if that's all you have on hand) and fresh sliced buffalo mozzerella (or shredded - whatever you have available). Sprinkle with ground black pepper. Bake for another 15 minutes.

A quick recipe is put the boneless breasts in a Pam'd pan, dump an envelope of dry French Onion Soup Mix on top, dump a small bottle of apricot jam on top, and a small bottle of Italian dressing. Cover it with foil and bake at 350. Maybe 20 minutes before I take it out of the oven I remove the foil. I suppose this could be done in a crock pot too. Too make it less fatty you could use low fat Italina dressing. What I usually do is throw the soup mix, a pack of Good Seasoning Italian dressing (dry), the vinegar and water it calls for in the recipe (skipt he oil), and the jam together in a small bowl. I mix them all together and then dump the concoction on top. Quick, easy, and I always have the ingredients on hand.

I often make Chicken Marsala when I am in a rush. Again--it's quick, easy, and I have the ingredients on hand.
