Okay, I think I have finally figured out a routine to help me with meal planning. I organized all my recipes into categories (pasta, Thai, pizza, Mexican, soups/stews, burgers, Indian, etc.), and each meal will be from a different category. I have enough categories (10-11 or so) so that they'll repeat every 2-3 weeks, depending on how many meals I make each week. For each category, I have a lot of recipes (lots of different pasta dishes, for instance), so I'm not making the same thing every time that category comes up. I hope that makes sense! It sounds totally anal to me when I read through it, but it made sense to me when I thought of it, and I think it will help keep me organized with the meal planning & shopping. :crossed:

Anyway, here's my meal plan for this week, starting with a not-too-overwhelming 4 meals per week:

1. Lentil-Vegetable Stew
2. Falafel in pita with sprouts, tomatoes, and tzatziki
3. Greek Lasagna
4. Thai Green Curry with Tofu & Vegetables

You will have to let me know how that Greek Lasagne comes out. Is it the recipe I posted a while back? I still haven't tried it. I was supposed to take some time looking through my new cookbook and meal planning this weekend, but it hasn't happened yet. I am so bad at this these days.....

Yep, that's the one! It has a lot of steps, so I'm going to try to do some things beforehand (like the chickpeas the night before while I make falafel). It sounds really good, though! I'll let ya know. :)

I have decided on making 4 dishes so far this week too. It's much easier this way. :)

1. Pureed carrot soup, caeser salad w/ homemade croutons and dressing
2. Mediterrenean tuna salad
3. Eggplant Parmesan
4. Antipasto w/ Crostini

my stepmom made a wonderful chicken/rice/broccoli dish for us that we had tonight and will probably also have tomorrow. For the rest of the week I have shopped for:

Crockpot chili with tortillas

Chiorzo,chicken and potato stew with bread

Chicken ceasar pasta salad

homemade pizza (probably friday night)

oh wow - great to know!! I haven't tried that yet either. I will have to make it soon!

I wasn't too impressed with the Greek Lasagna. :( It was WAAYYYYY too much of a pain in my :moon: to make, and I thought it was kinda bland. If you're going to make it, I'd recommend using jarred/canned artichoke hearts (unless you love artichokes and plan on eating 4-6 of them a few days before you make the lasagna) and canned chickpeas, for simplicity. If I were to make it again, I'd probably use pasta sauce instead of plain tomato sauce to give it some extra flavor. Oh, and I'd mix some cheese in with it, too. :lick:
