Today we had Lasagne, salad, and garlic bread.
Tomorrow (Wed).....fresh green beans with new potatos, cornbread, sliced tomatos/cukes, pork chops and salad.
Thurs.......Grilled steak (and dogs for Darek), basil baked fries, left over greenbeans, and grilled toast.
Friday.......Ham casserole, cresents, salad, and corn on the cob.
Sat.....Polo plate (fried spuds with polish sausage), rolls, fresh spinach for me, kraut and dogs.
Sun.......going out to eat with Tommy and my parents.

Looks good! We're moving this weekend so nothing planned here. I'll get a plan together for the next week though :)

I have no motivation to cook anymore. I made my first home-cooked dinner in a long time last night and it was delish though - chicken paprikash with broccoli over egg noodles. Tonight we are having whatever is in the fridge - matzoh ball soup, tuna salad, leftovers from last night.....whatever. ;)

Monday: Oven fried chicken, salad, mashed potatoes
Tuesday: Apricot Pork Chops, rice and salad
Wednesday: Going out to eat
Thursday: Going out to eat again for a MOYC meeting
Friday: Beefy Baked Beans

Wed to Sat- going out to eat! LOL! We would save so much money if we would just eat at home!

This week........
Today (Monday)--Another batch of green beans w/ new potatoes (they were so yummy last week we have been craving them since), sweet yellow cornbread, baked ham, and some fresh garden veggies.
Tuesday---Ham casserole (didn't make it last week) made with the left over ham and green beans, salad, and rolls
Wednesday---A "Krysti special".....angel hair pasta baked with zucchini, ham, bacon, pepperoni, ricotta and moz. cheese and pasta sauce. Salad and cheesy garlic bread.
Thrusday......shrimp fettucini alfredo. I buy a huge bag of fully cooked/frozen jumbo shrimp, sautee them in garlic and butter, pour the alfredo sauce over them until heated and mix it up with cooked fettucini (however you spell it)
Friday.......Italian subs. Made with french loaf, ham, salami, pepperoni, and 2 kinds of cheese baked until cheese is melted and bread is lightly toasted. Chips, pickle spears, and potato salad.
What's everyone else cookin'?

Here's the plan for us....
Mon: la Bamba casserole, tortillas
Tues: beef stew (crock pot), mashed potatoes, peas
Wed: Chicken parmesan, angel hair pasta, roasted zucchini
Thurs: Tuna melts, garlic and rosemary roasted potato wedges
Fri: greek salads, hummus, bread and maybe a grilled chicken breast for dh(all pre-prepped from Central Market)
Nicole has any non-spicy stuff that we are eating, but she still has her own meal most of the time

one of our faves.
La Bamba Casserole
From Cooking Light
1 (5.25-ounce) can whole green chiles, drained
Cooking spray
1 pound ground turkey breast
1 cup chopped onion
2 teaspoons chili powder
1/2 teaspoon ground cumin
1/4 teaspoon salt
2 garlic cloves, minced
1 (10-ounce) can diced tomatoes and green chiles, undrained
2 cups frozen whole-kernel corn, thawed
1 (16-ounce) can fat-free refried beans
1 1/2 cups (6 ounces) shredded cheddar cheese
1 cup chopped tomato
1/2 cup chopped green onions
Preheat oven to 375°.
Cut green chiles in half lengthwise. Arrange chiles in a single layer in an 8-inch square baking dish coated with cooking spray.
Heat a large nonstick skillet coated with cooking spray over medium-high heat. Add turkey, onion, chili powder, cumin, salt, and garlic; sauté 5 minutes, stirring to crumble. Add diced tomatoes; cook 5 minutes or until liquid evaporates.
Spoon turkey mixture over chiles. Top with corn. Carefully spread beans over corn. Sprinkle cheese over beans. Bake at 375° for 30 minutes. Let stand 5 minutes; top with chopped tomato and green onions.
