This is so yummy! If you are an Austinite, go to Central Market and get the roasted chiles. This would be really good vegetarian too - just add more potato or white beans, etc.


Hatch Green Chile Stew

2 pounds boneless pork, cubed (I used chicken)
2 tablespoons olive oil
1/2 cup chopped onion
1 garlic clove, minced
1/4 cup flour
2 1/2 cups chopped peeled fresh tomatoes
1 3/4 cups chopped peeled roasted Hatch green chiles
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon sugar
2 potatoes, cut into cubes
2 1/2 to 3 cups chicken broth



Brown the pork lightly in the olive oil in a large pot over medium heat. Add the onion and garlic. Saute for 3 to 4 minutes. Add the flour. Cook for 1 to 2 minutes, stirring constantly. Add the tomatoes, chiles, salt, pepper and sugar and mix well. Stir in the potatoes. Pour in the broth. Reduce the heat. Simmer, covered, for 1 to 1 1/2 hours or until the pork is tender.

Mmm, yum. Yep, I have two large things of chilis in my fridge. BTW, I always buy a bunch and them freeze them in baggies so I can have hatch chilis year round.

Hey Brenda -- that is such a good idea! There is no other flavor like Hatch green chiles!
Do you buy/freeze the roasted or the fresh ones?

Central Market's website has a few more recipes. We made a huge thing of salsa on Sunday and ate the whole freakin' thing that night :drool:

I freeze the roasted ones -- in baggies. I just mark how many peppers I put in each baggie so I know how many to pull out depending on what I'm making.
