Frozen Chocolate Pie
1 (9-inch) baked pie crust, pastry or graham cracker
1 cup confectioners' sugar
1/2 cup butter, softened
1 (6-oz.) pkg. semi-sweet chocolate chips, melted
1 tsp. vanilla
4 eggs
1 cup heavy cream, chilled
2 tablespoons confectioners' sugar
1 tsp. vanilla
Shaved chocolate
In small bowl, blend 1 cup confectioners' sugar with butter until fluffy. Blend in melted chocolate and vanilla. On high speed, beat in eggs, one at a time. Beat throughly after each addition. Pour over baked pie shell and cover with plastic wrap. Freeze serveral hours or until firm. In chilled bowl, beat cream, sugar and vanilla until stiff. Spread on frozen pie and garnish with shaved chocolate.
