Talking chocolate covered cherries

hi

not the maraschino cherries that are covered in chocolate that you bite into ane their mushy

i mean, like dried cherries dipped in choclate. i buy them but i think would be more fun to make my own

how come when i dip in chocolate its really thick? some people say to add paraffin but then its not as soft.

You can add milk that will make it thinner also do you melt the chocolate with butter that also helps.

i do but they never seem to dry right

kinda stay mushy

do you ever dip strawberries?

i do and i always end up putting them in the fridge, but then they get kinda weird...

can be hard to dip also cuz the professional places dip the strawberries but the strawberries still have the stem on

Chocolate covered Cherries

2 1/2 cups powdered sugar
1/4 cup margarine, softened
1 Tbs milk
1/2 tsp almond extract
2 eight oz jars maraschino cherries, well-drained
2 cups (12 oz) semi-sweet chocolate chips
1/2 piece of paraffin

In mixing bowl, combine sugar, butter, milk and almond extract. Mix well.
Knead into a large ball. Roll into 1-inch balls and flatten each into a 2-inch circle. Wrap around cherries and lightly roll in hands. Place on baking sheet lined with waxed paper. Cover loosely and refrigerate at least 4 hours or freeze.

Melt chocolate chips and paraffin in a double boiler or microwave-safe bowl. Dip cherries in chocolate. (if chocolate is too thick, add more paraffin) Set on waxed paper to harden. Store in covered container at room temperature for 1-2 weeks. Taste best at room temperature, but always good.

I wouldn't add milk to the chocolate. If you don't like the thought of adding paraffin (most chocolate candy has paraffin in it) you could add shortening (like Crisco).
