Penne ala Vodka

1 pkg. penne noodles
I didn't use bacon, but the recipe calls for it.
1 small onion chopped
3 cloves garlic
2 1/2 cups whipping cream
5 1/2 oz can tomato paste
1 tsp salt
1/2 tsp pepper
1/4 cup vodka
1 tbsp olive oil (I used more than this)
1/2 cup grated fine parmesan cheese

Directions:
Cook pasta
Heat olive oil in saucepan over med heat.
Stir in onion, garlic, bacon.
Cook and carmelize onions.
Stir in cream, tomato paste, salt, pepper, and vodka.
Simmer 10 minutes or so. During this process I added more olive oil.
Stir in cheese to tomato mixture.
Stir in Pasta. Mix well.

Top with extra grated cheese, salt, crushed black pepper

It was well received.

I make this ALL the time too... also minus bacon. My recipe calls for 2 tsps of hot chile flakes too, gives it a little kick. I second the review -- this is awesome. Not only that it always impresses dinner guests.
