What's for dinner tonight?
I thought this would be a cool ongoing thread if we can keep it up. Whoever wants to participate, feel free to jump in whether it be every day or once a week or whatever. Post your plans for dinner of the day you are posting. If possible, include a recipe. I will think about what we're having tomorrow and post back then. Hope some of you will join me!

This is a cool thread, but I tell you, most days my dinner will be a salad lol! Today I don't know what I will have but I can tell you what I had last night:
Tuna croquettes with rice.

I have today off from work so when that happens I make a more eleborate meal.
I love making Garlic Parmesean cheese chicken....
I don't have a real recipe just some ingresients that I throw together...
In a flat dish I add the following.....
Garlic powder
onion powder
parmesean cheese(sprinkle kind)
a packet of Good Seasoning Italian dressing mix(dry)
paprika(sp?)
then I drop chicken breasts in it and roll it around....bake on 350 degrees until done....again no time to give cause I just watch it closely......  but it is quite good and its one dish my boys will ask for seconds on .....
well I guess I just talked myself into that one.....

ok change of plans....went to the grocery store and the beef roasts were on sale. I picked up one and have been slow cooking it since 2pm.....add potatoes and corn.

Tonight is dd's gymnastic's class so I just threw some chicken and veggies in the crockpot this morning so it'll be ready when we get back home.

beef and veggie stir fry with lomein noodles, potstickers
i throw this together:
sautee beef (I buy it packaged as "beef for stirfry)
add a bag of frozen veggies specifically for stirfry. my grocery sells the veggies and sauce combined.
meanwhile, boil a package of ramen noodles. once they are cooked, add to the veggie/meat combo.
I buy frozen potstickers and pop them in the oven.
kind of lame but quick and good!!

spaghetti with meatballs and a caesar salad
I bought a caesar salad kit - the romaine lettuce, croutons, parmesan and dressing
I made the meatballs though:
lean ground beef, shredded parmesan cheese, 1 egg lightly beaten, bread crumbs, 1 small yellow onion (chopped), oregano, fresh ground pepper....mix together with hands and form balls.
heat pan with olive oil and add meatballs till browned. drain oil and add tomato sauce to the pan. simmer meatballs while boiling the spaghetti. mix together and voila!

Beef and noodles with mash potatoes! I can't get enough of that since becoming pregnant!
I cook the beef in a slow cooker all day then I transfer it to a pan and add the noodle when the potatoes are just about done. Really easy!

Cheesy Chicken, Sauteed Peas, and Au Gratin Potatoes
Cheesy Chicken
Dredge chicken breasts in butter (healthy I know) and coat with crushed Cheez Its.
Sauteed Peas
Frozen Peas, garlic and olive oil in a pan. I must say that this is a delicious way to prepare peas.
Potatoes are from a box. I swear one day I will really cook again. For right now, it's all about what's quick and will fill the bellies.

Last night, we had glazed citrus chicken, honey-spiced carrots, and broccoli-cheese rice (Lipton mix).
Glazed Citrus Chicken:
Place ~ 1 lb B/S chicken breasts or tenders in baking dish. Squeeze juice from 1 orange, 1 lemon, and 1 lime over chicken. Sprinkle 1 1/2 teaspoons seasoned salt and 1 teaspoon seasoned pepper evenly over chicken (recipe calls for Lawry's brand). Cover and bake at 400 degrees for 30 minutes.
While chicken is baking, prepare glaze. Drain 1 can apricot halves and process in blender. In small saucepan combine processed apricots, 2 tablespoons brown sugar, 1 tablespoon butter, and a dash of nutmeg. Heat until bubbles appear. Reduce heat, cover, and simmer 5 minutes stirring once or twice. Pour glaze over chicken and bake, uncovered, an additional 10 minutes.
Honey-Spiced Carrots:
Peel 1.5 lbs carrots and cut into 1.5 x 0.5 inch strips. Boil water and cook carrots for 3 minutes or until crisp tender. Transfer to colander. In same saucepan, melt 1 tablespoon butter over moderate heat. Add 1/4 cup honey, 1 teaspoon sugar, 1/2 teaspoon ground allspice, 1/4 teaspoon black pepper, and 1/8 teaspoon ground cinnamon. Stir until bubbly. Add carrots and heat, tossing, for 3 minutes or until well coated and hot.
