Menu Plan Monday

Monday: chicken marsala, salad
Tuesday: meatloaf, creamed spinach, mashed butternut squash
Wednesday: baked ziti, sauteed zucchini and mushrooms, caesar salad, garlic bread
Thursday: grilled mojo chicken, black beans and rice, plantains, salad
Friday: chicken quesadillas, corn, salad
Saturday: burgers, fries, salad
Sunday: pizza, salad

C - on your salads - do you just have a lettuce salad? or do you do something else?

Also, do you buy the bagged salad mix or do you start with a head of lettuce and go from there?

We like salad too, but I get tired of the same ol' stuff.

Also - is there a recipe for the mojo chicken?

I usually buy romaine, iceberg or mixed greens and make my own salads. I use tomatoes, carrots, cukes, onions, sometimes chick peas, hearts of palm, artichoke hearts, olives, really depends on what I have around, but I normally try to keep it simple unless the salad is our main dish. Sometimes I will buy salad in a bag, but not often. I find that it has a weird smell even if I wash it again.

The mojo chicken is just chicken marinated in mojo sauce and then grilled.

C- do you have a recipe for your creamed spinach. I haven't found one that is just perfect yet and I love the stuff!

RBH, yes, go to the freezer section of your grocery store, buy a box of Stouffer's creamed spinach and follow the heating instructions on the box.
