menu of the week: Feb 10

Sun: Swiss chicken, crescent rolls, green beans

Mon: eggplant parmesan, salad and bread

Tues: Meatball stew, corn bread

Wed: tuna melts, tomato basil soup

Thurs: Stuffed poblano peppers, orzo, hearts of palm salad

Fri: Pesto pizzas, carrots and cukes with dip

Sat: toasted ravioli, grilled turkey sausage and garlic bread

I am also making a big thing of pasta w/cheese and broccoli (from RR's 30 for kids cookbook) for lunches and stuff during the week.

Sounds great, D! How do you make your hearts of palm salad? I love them....in fact, I made a huge pasta salad tonight with hearts of palm and kept picking them out to eat.

It's been so hard not having an appetite....I cannot wait to get back to meal planning!!

my hearts of palm salad is so easy (and kind of lame, really)... I take fancy greens, toss them in a mixture of balsamic and lite Italian dressing (just a touch, I don't like an overdressed salad). Then I take the hearts of palm and sometimes sliced roasted red pepper (jarred) and arrange them on the plated greens. Then a nice shaving of good parm and voila, hearts of palm salad!
