Menu of the Week: April 21

It has been a long five or six months without a meal plan. I was nauseas for the first 4 months of my pregnancy and the past month or so we've been working on our kitchen remodel. I finally have a working kitchen again and I have a great appetite. I also feel extremely guilty for totally copping out on any cooking for so long. My family and myself have definitely suffered...and I am so sick of eating out. So, this is the week that I am starting back into my meal planning. I cannot wait to start working in my brand new kitchen!

Monday: chicken taco salad with cilantro ranch dressing

Tuesday: spaghetti and turkey meatballs, salad, garlic bread

Wednesday: shrimp with mango cilantro dressing, salad, corn

Thursday: pizza and greek salad

Friday: chicken curry with chickpeas and tomatoes, rice, zucchini

your plan sound yummy! I bet you are excited to cook in your kitchen! Here's what our week looks like:

mon: roasted turkey tenderloin, mashed potatoes and gravy, green beans

tues: chicken with tomato sauce and peperocinis, angel hair pasta, roasted zuchinni

wed: asian marinated pork tenderloin, rice pilaf, broccoli

thurs: The Birthday girl has requested homemade chicken tenders and mac-n-cheese (I am making Barefoot Contessa's mac and cheese). Then cake

Fri: homemade stromboli

sat: order in (probably Johnny Carino's)

Thanks Heather!! The chicken taco salad was so good!! My DH thinks it could be on a restaurant menu. If you are interested, here is the recipe: Chicken Taco Salad with Cilantro-Ranch Dressing. Tonight I'm making the spaghetti and meatballs so I am right on track so far. haha

We ended up going out last night and tonight I made the chicken curry. It was very good. Tomorrow I will make either the pizza & greek salad or the shrimp. I guess it depends what our day is like and how tired I am. Pizza and salad are way easier.

I love that chicken curry recipe (I love her cookbook). I need to put that on the MP for next week - we are sort of in a rut - at least one repeat every week... I like getting ideas from others plans!

The only thing with the curry recipe is that I think you need to add a lot of salt to really get the flavor of the curry. Not a big deal, but definitely something to know for when you make it.
