Menu of the week: April 27

What's cookin' this week? I recently subscribed to Everyday Food Magazine and I love it! Several of my recipes are from this month's mag:

Sun: salmon or chicken (I had chick, dh had salmon), mashed potatoes, green beans

Mon: Spinach and brie chicken, tomato orzo

Tues: fish cakes, cheddar biscuits, steamed broccoli

Wed: Flank steak with sugar snap peas and asparagus stir fry, rice

Thurs: chicken milanese with arugula salad, roasted potato wedges

Fri: baked subs

I've had such a hectic weekend that I forgot tomorrow was Monday. I totally forgot to do my meal plan. I guess I'll work on it tomorrow.

Your menu looks great!! How do you make those fish cakes?

here is the recipe for fish cakes (it is from Kraft Food and Family, hence all of the brand suggestions) I use cooked orange roughy instead of the tuna though . I also serve with some bottled remulade for dipping.

2 cans (6 oz. each) light tuna in water drained, flaked
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1 cup KRAFT Shredded Mild Cheddar Cheese
1/2 cup shredded carrots
1/3 cup KRAFT Mayo Real Mayonnaise
2 Tbsp. CLAUSSEN Sweet Pickle Relish
3/4 cup water

MIX all ingredients. Cover and refrigerate 10 min.

HEAT large nonstick skillet sprayed with cooking spray on medium heat. For each tuna cake, shape 1/3 cup lightly packed tuna mixture into patty. Add patties to skillet in batches.

COOK 3 min. on each side or until golden brown on both sides, turning over carefully.

Thanks for the recipe, D!

I know it's already mid-week, but here is my plan:

Monday: pan-fried grouper; avocado, tomato and cucumber salad; crispy baguette

Tuesday: spaghetti and meatballs, broccoli

Wednesday: parmesan chicken cutlets, mixed greens salad, corn on the cob

Thursday: chips w/ homemade salsa and guacamole, bean burritos

Friday: Greek salad, pizza

I know it is the end of the week but here was my meal plan ( I actually stuck to it too. )

Monday: Beef roast, potatoes, carrots, and biscuits

Tuesday: Cheesy chicken casserole, steamed broccoli

Wednesday: Meatloaf, mashed potatoes, green beans

Thursday: Home made pizza and a garden salad

Friday: Baked pork chops, shells and cheese, peas


If you want to get a different taste from your mash potatoes try using reduced fat/no fat sour cream in place of your milk when mashing them. I also sometimes add cheese or garlic to make a change.
