Brunch Recipes
Working on my Mother's Day Brunch menu.....
I am looking for a good frittata recipe - particularly a vegetable and/or potato one. I don't want to put meat in it. Or even an egg casserole.....something that can be made ahead of time and just reheated the next day.
I'm also looking for a tried and true baked french toast recipe....one that can be made the night before and just put in the oven in the morning.
Anyone have some good ones they've tried?

I have an all time favorite (and super easy) egg casserole dish, but I've never made it ahead of time and re-heated. Might be worth a try though. I know that there are several egg casserole dishes that you can prep the night before, put in the fridge unbaked, and then bake the next day. Allrecipes.com has a ton.
Breakfast/Brunch Pizza
2 cans refridgerated cresent roll dough
1 8 oz package shredded cheese (your favorite kind - I usually use a bit more than one package)
1 medium tomato, seeded and chopped
1/4 cup chopped green pepper
1/4 cup chopped onion
6 eggs, beaten (I usually use only 4 eggs, but I also do it in a smaller pan than it calls for)
Heat oven to 350. Spray a large baking sheet (12x18... I just use my 9x13 pan) with non-stick cooking spray.
Unroll the crescent rolls on the baking sheet. Press the seams together and pust the crust up the sides of the pan. Sprinkle 1/2 of the cheese on the crust. Top the cheese with the vegetables, then top with remaining cheese. Pour the beaten eggs evenly over the pizza.
Bake for 15-20 minutes or until the eggs are cooked through.
This is so good and versitile too. You can add whatever veggies want, whatever cheese you like, etc. Sometimes I will just buy a container of pre-chopped pico from the produce dept and use that instead of chopping the veggies.

Another SUPER easy brunch thing (it seriously takes like 5 min to throw together and the 20 to bake).......
2-3 cups crushed tortilla chips
2 cups shredded cheddar
1 large tomato, seeded and chopped
1/2 cup chopped onion
1/2 cup chopped green pepper
1/4 cup chopped cilantro
(or, forget all the chopping and buy a container of mild pico or fresh salsa from the produce dept)
6 eggs, beaten
Heat oven to 350. Lightly grease a 2 quart baking dish
put chips in the dish, then veggies, cheese and eggs. Bake for 25-30 minutes or until eggs are set.
The recipe says to cut in squares and serve, but I like to let people scoop out what they want, and then I serve with flour tortillas, extra salsa, extra cheese, sometimes avocado and sour cream... almost like breakfast tacos or migas. I like to serve with potato wedges (from the freezer section)

Those both sound great!!! Thanks! I suppose if I do the other things ahead of time, I can certainly swing making a quick casserole in the morning.

I found some nice looking recipes that I can prepare the night before....
Guten Morgen Eggs presented by The Chalet Inn
This recipe can easily be prepared the night before.
Serves 8 - 10
16 eggs
1 teaspoon nutmeg
dash salt, dash pepper
1 tablespoon parsley (fresh or dried)
1/2 cup sour cream
1/4 cup finely chopped scallions
1/2 cup crisply fried bacon
8-12 fresh mushrooms, sliced
2 cups grated sharp cheddar cheese
Beat eggs and nutmeg well. Scramble in skillet, Add salt, pepper and parsley. Place cooked eggs in greased baking or quiche dish as first layer. Now layer sour cream, scallions, bacon, mushrooms, and cheese. Cover and refrigerate overnight.
Bake in a 300 degree oven for 30 minutes.
*I am going to halve the recipe.
We have 8 people, but 16 eggs just sounds insane. We have plenty of other food too, so I'm not too worried about it being "too small"

Baked French Toast presented by Lord Stocking's Bed and Breakfast
1/3 cup Butter, melted
1/3 cup Brown Sugar and 1t. Cinnamon
1/2 cup chopped pecans or walnuts
8-10 1-inch thick slices French Bread
4 eggs, beaten
1 3/4 cups milk
In a small pan over low heat, stir together the melted butter, brown sugar and cinnamon. Pour into a 9X13 sprayed baking Dish. Sprinkle with chopped walnuts or pecans over the butter mixture. Arrange bread slices in a single layer on top of the nuts. In a medium mixing bowl, combine the eggs and milk. Pour egg mixture over the bread in the baking dish. Sprinkle the remaining pecans or walnuts over the top of bread slices. Cover and refrigerate the mixture for 2-24 hours. Remove cover from Baking Dish. Bake in a 350 degrees oven for 30-35 minutes or until the center appears set and the top is lightly browned. Let stand for about 10 minutes before serving. Can be served with fruit or maple syrup.
Serves 8-10

Grand Fruit Salad
2 cups green grapes
2 cups sliced strawberries
2 cups sliced plums
1 cup sliced peaches
1 cup orange segments
1 cup sliced peeled kiwi
1/2 cup Grand Marnier or other orange liqueur
1/2 cup orange juice
2 tablespoons sugar
Combine all ingredients in large bowl. Cover and refrigerate up to 8 hours.
*Will make this in the morning

We are also going to have bagels on hand, with cream cheese and sliced cucumbers, tomato, and red onion.
As well as a coffee cake.
For drinks, I am going to make a nice herbal iced tea, lemonade, OJ, water, and if anyone wants coffee (although I know we all drink ours earlier in the morning).
Does this sound like enough???

that sounds like a nice spread! The egg dish sounds terrific but I agree, 16 eggs sounds like way too much.

Everything turned out deliciously.
I actually did use the 16 eggs for the Guten Morgen eggs. I needed to b/c it looked so small with just 8. There were 8 of us so I figured that was just 2 eggs per person. LOL!
Anyway, the french toast was TO DIE FOR!!! It was seriously so good, especially if you like pecans.
The fruit salad was great. I made the liquor sauce on the side for whoever wanted it.
We barely had any leftovers!
