Mexican Rice Recipe?

Anybody have one they like?

are you interested in a beans and rice type recipe? If so, this is a favorite:

Black Beans and Rice

2 cups chicken (or vegetable) broth
1 cup rice (I like to use brown rice sometimes)
2 tsp minced garlic
1/2 cup chopped onion
2 16oz cans black beans, drained and rinsed
1 cup canned, crushed tomatoes
2 TBS red wine vinegar
1/4 tsp chili powder
2-3 TBS fresh chopped cilantro
================================================

Combine broth and rice, boil. Simmer until liquid is absorbed, about 15 minutes. Meanwhile, cook onion and garlic in a skillet until fragrant. Add beans, tomatoes, vinegar and chili powder, stiring until well combined. Add rice, then add the fresh cilantro.

This was AMAZING! It is definitely part of the repertoire now. It was a huge hit with our guests too. I used basamatic rice and it worked really well too.

Yay Meliz, I am so glad that it was a hit!! I used to make this in huge batches and freeze dinner sized portions.
