My first meal plan attempt...for week May 4

This will be my first attempt at meal planning. I sat down and found all weight watchers friendly meals. So any of these listed below will be low fat low cal and high fiber for those interested....

Sunday: Tropical Pork tenderloin with Tropical Supper Salad

Monday: Pineapple Chicken with Cheddar Potato Bake

Tuesday: Cranberry orange glazed Ham with loaded mashed potatoes

Wednesday: Pork Chops and Potatoes ( it is a combined dish)

Thursday: Buttery Cajun Shrimp with Parmesan Hominy

Friday: Crunchy Honey Coated Chicken nuggets with potatoes ranchero

Saturday: Moo Burgers with cheesy chili fries

I will start again on Sunday and post which new recipes I liked and didn't care for. If you would like any of my recipes let me know. If I should change it up a bit let me know. I tried to not have the same dish 2 nights in a row.

Thanks for the reminder! I keep forgetting when Sunday rolls around that I need to meal plan. Everything on yours looks great. Definitely keep us posted how they turn out.

Ok - I just worked on mine and this is what I've come up with so far:

D's Turkey Croquettes - turkey croquettes

Deana's Mom's Oven Meatball Dinner - Oven Meatball Dinner
(it looks so good - I want to make it tonight, but I am missing a couple of ingredients)

**Thanks for those two recipes, D! I am going to try to get to them both this week, but not two nights in a row. Maybe I'll do the oven meatballs at the end of the week since I'm going to do the croquettes tonight.

Chicken & Veggie Stir Fry w/ Rice, Asian Salad

Some big salad with enough non-meat protein to be a full meal, bread w/ dipping oil

Some shrimp dish - not sure which one yet.

I don't know what day we will have what, that is why I didn't post it per day.

glad you are using those two recipes, C. They are both really tasty.

Sun: spinach stuffed stromboli and roasted broccoli

Mon: spagetti pie

Tues: leftovers

Wed: pasta toss with cherry tomatoes and spinach

Thurs: spinach and brie stuffed chicken, tomato orzo

Fri: take out

Sat: either turkey croquettes or tukey meatloaf, mashed potatoes, green beans.

Yes, there was a sale on spinach and, I am trying to do more meatless stuff, hence all the pasta.

ok so the tropical pork tenderloin was AWESOME but the salad was not that great. I will post the recipe and you can see or yourself....




QUICK SUPPER:
TROPICAL PORK TENDERLOIN
A bit of sweet, a bit of heat
Hands-on time: 10 minutes
Time to table: 40 minutes
Serves 4

* 1 teaspoon kosher salt
* ½ teaspoon cinnamon
* ½ teaspoon cumin
* ½ teaspoon chili powder
* ¼ teaspoon black pepper

* ½ tablespoon olive oil
* 1 pound pork tenderloin

* GLAZE ¼ cup brown sugar
* 1 tablespoon minced garlic
* ½ tablespoon Tabasco sauce

(Wash your hands!) Preheat oven to 350F. Heat a large, oven-proof skillet on medium high, then heat olive oil. (If skillet has a wooden handle, wrap it in two layers of foil.) While skillet heats, mix spices in a small bowl. With your hands, coat meat all over with spices. (Wash your hands!) Sear meat, turning occasionally, for 4 – 5 minutes.

Combine glaze ingredients and pat atop meat. Place skillet in oven for 20 minutes or until a meat thermometer reaches 140F. Remove skillet from oven, cover with foil for about 10 minutes, the internal temperature will rise to about 155F. Slice thin on the diagonal and serve immediately.




QUICK SUPPER:
TROPICAL SUPPER SALAD
Bright with citrus and tropical fruit
Time to table: 20 minutes
Serves 4

* LIME VINAIGRETTE 2 tablespoons olive oil
* Zest from 1 lime
* Juice from 3 limes (about 3 tablespoons)
* 1 tablespoon Dijon mustard
* 1 tablespoon sugar
* 1 teaspoon curry powder
* ½ teaspoon kosher salt
* ¼ teaspoon black pepper

* SALAD 1 red bell pepper, cut in thick matchsticks
* ½ cup currants
* 4 cups thin-sliced Napa cabbage
* 4 cups baby spinach
* 2 ‘wet fruits’ such as mango, orange or banana, in slices or bite-size pieces
* 1 avocado, in slices or bite-size pieces, optional but delicious

The Pineapple chicken was a " its ok " dish. The cheddar potato bake was good. I think my family is so used to the same ole same ole they are not willing to give new tastes a try. I am not giving up though because I have high cholesterol and have to eat healthy so there is no choice and I will not make a buffet meal every night to accomodate everyone.
