Menu of the Week: May 26

It's been a couple of weeks since I've meal planned and man, can I tell the difference. Basically we don't eat. Ok, that's not entirely true, but I don't end up really cooking much if I haven't planned a menu. I have a mental block at the grocery store and end up buying fruit, cereal and snacks. Nothing for dinner.

So anyway, I have already made my menu for next week. It doesn't matter what day we have what. I will shop on Sunday or Monday and go with whatever we feel like on that day or how much time I have to prep. I am just determined to cook and eat yummy home cooked meals.

Here we go:

Parmesan chicken cutlets, mixed greens salad

Fish (not sure what kind yet - basically whatever looks good at the market); avocado, tomato and cucumber salad

Spaghetti and (turkey) meatballs, steamed broccoli, garlic bread

Shrimp w/ mango and cilantro salsa

Chicken taco salad with cilantro ranch dressing

Looks good C...just a question. Does Jax eat with you or do you fix something different for him? Does he try new foods? My boys look at my new recipes with a skeptical eye.

Well none of those are new recipes - they are all "staples" in my house. He LOVES shrimp and fish so yes, he eats those meals. He eats chicken too, but for instance when I make the chicken taco salad, I give him a plate with the things he likes from the salad (which is basically everything minus the lettuce and jalapeños). There are definitely quite a few times when I have to make him something separate though (i.e. turkey hot dog, mac-n-cheese, ravioli, etc). I wish he'd be less picky, but I'm just chalking it up to his age right now. When he was younger, he would eat anything and everything you put in front of him.

I just finished my mealplan for next week....

Sun: grilled steaks, mashed sweet potatoes, green veggie

Mon: grilled chicken, roasted zucchini and potatoes, bread

Tues: mexican chicken casserole, avocado, tomato and corn salad

Wed: Italian meatloaf, mashed potatoes, green beans

Thurs: shrimp and broccoli over angel hair pasta, bread

Fri: homemade veggie pizza, salad


*** just a little note about kid stuff (since Heather mentioned it ), I always offer new foods and then have something that they like too. For instance, I don't know if they will eat the shrimp that I am making next week but I know they will eat the broccoli and pasta. I may heat up a turkey dog and slice it up if they don't eat the shrimp, but I don't make them their own *entire* meal. I mealplan around their likes as well as dh's and mine, and know that they will find *something* on their plate that they like.

Yummm...the menus look great girls

Monday....Mom's grilling out
Tuesday...Baked Italian chicken, sour cream and chives mashed potatoes, garlic cheese biscuits, and corn on the cob
Wed...Pork chops, fried potatos, rolls, and corn on the cob
Thursday.....steak, french fries, green beans, and of course corn on the cob
Fri...fried chicken, mashed potatos/gravy, rolls, mac n cheese, and of course corn on the cob
Sat and Sun are up in the air.
I make corn every single day, since it's the only veggie D will eat. Normally I break down and make fries every single day as well--since D most likely will not eat mashed or fried potatoes either. Steak, chicken, or pork chops is served at my house 7 days a week. Those are the only meats he'll eat.

I guess i should have said, with avocado, Tomato and Corn Salad

I don't really have a formal recipe, I just first whisk about a TBS of olive oil, TBS of white wine vinegar, salt, pepper, and a few squirts of lime juice together in a bowl. Then I add one diced avocado, 2 diced roma tomatoes and a can of drained corn and mix it all up. Sometimes i add some chopped red onion and cilantro IF I have it, but I don't buy it specifically for this recipe. I sometimes add a can of black beans too but the casserole I am making has pinto beans and I didn't want to go overboard

That sounds so good!!!

Last night I made some delish mashed black bean and cheddar quesadillas. Then I put together a salad of shredded lettuce, chopped tomatoes, onion, avocado, and cilantro that could be eaten separately or on top of the queasas.

Yum!! Sounds delish! I can't wait til we can get some tomatoes out of the garden! I will definitely be making this!
